How To Make Fluffy Keto Almond Flour Pancakes

Gather all of your ingredients and use accurate measuring cups and spoons to measure out all the ingredients before you start:

Then, in a bowl, combine almond flour (I recommend this one from Amazon for the best texture), powder sweetener (this is my go-to powdered low-carb sweetener), and baking powder.

Next, fold in almond milk, vanilla, and butter and stir a few times.

Then separate the eggs. Place egg yolks into the dry ingredients and stir until everything comes together.

Then beat egg whites separately in a chilled bowl, together with a pinch of salt until firm peaks form.

Gradually fold the beaten egg whites into the batter. Make sure you stir gently until all egg whites are incorporated.

Once done, it should look like this:

Now it’s time to make these keto almond flour pancakes.

To make them, heat a large non-stick pancake pan over medium heat and pour ¼ cup of the keto pancake batter into the skillet per pancake.

Important Note: To check if the pan is hot enough, sprinkle a few drops of water onto the surface — if they sizzle and evaporate quickly, the pan is ready for pancake batter.

Are coconut flour pancakes better than almond flour pancakes?

I have a coconut flour pancake recipe that I like. However, hands down, I enjoy almond flour pancakes a lot better. They’re naturally fluffier and feel and taste more like ‘real’ pancakes than most coconut flour pancakes.

Can you use almond meal instead of almond flour?

You can use almond meal to make keto pancakes. However, because almond meal is made from ground almond which typically still contains the skins and has a more coarse grind, your pancakes may look different in color and feel more ‘heavy’ than pancakes made with blanched almond flour. 

On the other hand, almond flour, especially blanched almond flour has a much finer texture and this will help your pancakes turn out lighter and fluffier if you follow this exact recipe.

Can almond flour substitute for all-purpose flour?

In order to make keto friendly pancakes you must use a gluten free flour like almond flour so that your net carbs are low. However, if you’re attempting to make these pancakes but you’re not following the keto eating plan, then it is possible to swap all-purpose flour for almond flour using a 1:1 ratio.
