For this simple keto recipe all you will need is some cauliflower, egg, cheese, and some herbs. Tips to make grilled cheese with cauliflower bread

  1. Do not skip the microwave step. The cauliflower really needs to dry out before you continue with the next steps. If you want to cut down the time, you can use the frozen cauliflower rice.
  2. The recipe calls for cheddar cheese, but you can also use other types of cheese and even some ham. Go with Parma ham and gruyere for a gourmet sandwich.
  3. The best way to make the bread slices is with the oven. Cooking one in a skillet may the best solution if you are a beginner cook. Flipping the cauliflower bread slice in a skillet may be tricky and it may fell apart. Still if you think you can manage it, give it a try.

  • 1 medium cauliflower head, riced (process in a food processor to get the “rice”)
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried basil or Italian herb seasoning
  • 2 thick slices white cheddar cheese

Place the riced cauliflower in a microwave safe bowl and microwave on high for 2 minutes. Then remove the cauliflower from the microwave, stir and microwave again for 3 minutes.

 

Repeat this step again and microwave for 4 minutes.

Remove the cauliflower from the microwave, stir for the last time and set in the microwave for another 4-5 minutes. The key is to get really nice and dry cauliflower rice.

 

If you want to skip this step, just use frozen cauliflower rice to make these keto bread slices.

 

Next, combine the riced cauliflower with egg, parmesan, and dried basil and stir to combine.

Preheat your oven to 350F. Line a baking sheet with parchment paper.

Divide the cauliflower bread mix into four portions and shape each portion on a baking sheet, to 1/3-inch thick rectangle.
