Although this recipe doesn’t have the texture of bread, it has a very pleasant taste and satisfies my expectations for a good breakfast. Let your imagination run wild with the flavors and give yourself a different taste every morning.

Does this keto bread have carbs?

When it comes to keto bread, the lower the carbs the better. This cauliflower bread loaf has 10 slices/servings and each slice contains 2g of net carbs!

Compare this to regular whole wheat bread which contains 11 grams of carbs per slice! So, although this did not turn out to be a loaf of bread with no carbs, it is pretty good for low carb eating and, it is in line with my other keto bread alternatives that are also low in carbs.

Can this keto cauliflower bread be used for keto toast?

  • ½ cup of almond flour (you can also use coconut flour)

How to make cauliflower bread

To make this recipe, you will of course need to collect all of your ingredients in one place.

Then preheat the oven at 180 ° C / 350 ° F and grease an ovenproof container, that is rectangular in shape, pound cake type. I used a container of 17cm long by 10cm wide.

Separate the saplings from the cauliflower and process them until a fine grain is obtained.

The processed cauliflower should look like this.

(This ‘flour’ can be dehydrated in the microwave oven. Then let it cool before adding to the rest of the ingredients.)

Beat the whites until stiff peaks form and reserve. It is important that the egg whites are at room temperature and do not contain remains of peel or yolk.

In the mixing bowl, incorporate the egg, almond flour, cream cheese, baking soda, and apple cider vinegar. Add the cauliflower to the mixture and stir with a spoon, finally, add the egg whites until stiff. Season to taste.

If you want, you can add a little dried garlic or any other herbs you want to make the bread taste amazing.

Pour this preparation into the greased mold or loaf pan, sprinkle with sea salt and pumpkin seeds and bake for 10 minutes.

What is the texture of cauliflower bread?

Most cauliflower bread recipes are light and somewhat airy due to riced cauliflower and egg whites. This particular recipe is very airy as I used more cauliflower than almond flour in the recipe and because I did not process to cauliflower for very long.

This cauliflower bread loaf is sturdy enough to be sliced and used in sandwiches or to make keto toast. However, it is a bit crumbly.

If you want a sturdy bread loaf that is denser and acts more like ‘regular’ bread, add more almond flour to the recipe. Adding another cup of almond flour and 2 more egg whites will do the trick.

Also, you can process your riced cauliflower for a little while longer to obtain a texture that resembles coarse crumbs rather than a texture that resembles cauliflower rice.

Cauliflower bread calories

Like carbs, each cauliflower bread slice is low in calories and only contains 44 calories in every slice. This is really good for people who are conscious about calories.

What to serve with this cauli bread?

This bread is very versatile and you can use this in any way you choose, Here are a few way I recommend:

  1. Use to make low carb toast or as a substitute for sandwich bread
  2. Use to make grilled cheese sandwiches
  3. Use to accompany soups and stews

How to store cauliflower bread

You can keep this cauliflower bread in the fridge in an air-tight container for up to 4 days which makes this a great recipe for busy people. You can even meal prep with these! Learn more about storing cauliflower bread to make it last longer and stay fresh.

Can I use cauliflower flour to make keto cauliflower bread?

Yes, you can use cauliflower flour in your homemade keto cauliflower bread. Like many other flour alternatives on keto, this kind of flour is quite low in carbs.

It should be noted though that, not every bag labeled cauliflower flour is actually keto friendly. While the name cauliflower would lead you to conclude that is made with low-carb ingredients, some brands of cauliflower flour contain ingredients like cauliflower powder, brown rice flour, white rice flour, potato starch, and tapioca flour which are not allowed on keto.

So, use a good brand like this one, or skip it altogether and use store-bought riced cauliflower or homemade cauliflower rice to make this keto cauliflower bread loaf instead.

Other easy ways to use the cauliflower batter

Besides this cauliflower bread loaf, you can also use the batter to make a few more cauliflower recipes including:

  • Cauliflower breadsticks: Simply lay out the batter on a large baking sheet lined with parchment and bake for about 15 minutes. Then slice the low carb cauliflower breadsticks into 10-12 slices.
  • Cauliflower mozzarella sticks: Add 1 cup of mozzarella cheese to the batter, then spread the batter on a baking sheet. Bake for 15 minutes and slice into 10-12 slices.
  • Cauliflower cheese bread: Add about a cup of mozzarella cheese for a cheesy cauliflower bread recipe
  • Cauliflower garlic bread: Add 1 tablespoon of garlic powder for a keto garlic bread made with cauliflower.
  • Cauliflower buns: Instead of making the batter into a loaf, shape it into 3-inch circles and make some yummy cauliflower buns instead.
  • Cauliflower flatbread: This batter can also be used to make a flatbread or flatbread pizza

Flavor variations

While this bread can be made plain, there are many ways to add great flavor to this bread. Here are some ideas below:

  • Add garlic powder for a cauliflower garlic bread
  • Add fresh herbs like rosemary, chives, fennel, and basil
  • Add Italian seasoning for a delicious Italian cauliflower bread
