Fathead keto pizza is a pizza that is made using a fathead pizza crust that is a low carb, keto friendly and gluten free keto pizza crust typically made with cheese, cream cheese, eggs and a low carb flour of your choice.

If you’ve tried a  recipe made with cauliflower before, you know that although it tastes good,  you lose the magic of pizza that lies in eating it with your hands and frankly it does not taste like the traditional pizza you know and love.

However, fathead pizza dough is easy to make and gives you the opportunity to enjoy a keto friendly pizza that has a somewhat similar texture to pizza made with wheat flour! Isn’t that something!

How many carbs are in keto pizza?

The number of carbs in a serving of keto pizza depends greatly on many factors including the kinds o low carb flour you use, the serving size of each pizza slice, the kinds of sauce used and so on.

For this particular low carb keto pizza, each serving size contains 2.9 net carbs. The carbs in this recipe are mainly from the almond flour used as 1 cup of almond flour contains 24 grams of carbs and 14 grams of fiber (i.e 10 grams of net carbs).

As stated above, you can use any type of low carb flour that you choose. For this recipe we used almond flour as it is lower in carbs, easy to find and fairly easy to use.

Before we begin, I highly recommend using a kitchen scale to measure out each ingredient as this will help you get better results. After all, if you plan to follow a keto lifestyle and see real results a scale is a necessity in your kitchen.

To make your fathead pizza crust, you will need to follow only a few simple steps.

Gather your ingredients:

  • 1 ½ cup mozzarella cheese
  • 2 tbsp cream cheese
  • 2 eggs
  • 1 cup almond flour

Preheat the oven to 200 °C (400 °F).

Melt your mozzarella and cream cheese in a microwave  for about 1 minute or non stick pot. Mix well until combined fully.

 

Add in your eggs (room temperature).

 

Then add in 1 cup of almond flour and mix well until everything is  completely incorporated. It is going to be sticky.

Moisten your hands with olive oil and flatten the dough on baking paper to form a circle about 20 cm (8 inches) in diameter. You can also use a rolling pin to smooth the dough between two sheets of baking paper.

Remove the top sheet of baking paper (if you used it). Pierce the dough with a fork over the entire surface. This is all it takes to make an almond flour pizza crust for your keto pizza.

Then bake for 10-12 minutes until golden brown. You’ve now made yourself an easy low carb pizza crust.

A few tips for making the keto pizza dough

  1. Oil: Oiled hands work wonders when handling fathead dough. Using oiled hands will help prevent the dough from sticking to your finger and making a mess.
  2. Baking Paper: Rolling the fathead dough between 2 sheets of baking paper makes the process a breeze as this dough can be sticky and can become messy if handled like regular dough.
  3. Room temperature egg: Ensure that you use room temperature eggs in this recipe so that the eggs do not cool down the mixture of melted cheese.
  4. Microwave: If your melted cheese solidifies, then it is a good idea to reheat it in the microwave for short while to  help soften it a bit before trying to knead it again.

To do this gather your pizza topping, cheese, pizza sauce and some herbs if you’d like. We used these ingredients:

  • ⅓ cup of marinara sauce
  • ½ cup of grated mozzarella cheese
  • 100 g of pepperoni
  • 1 sprig of fresh oregano

Spread a thin layer of marinara sauce over the dough.

Top with pepperoni, cheese and oregano. Bake for 10 minutes more or until the cheese has melted.

  2. Heat the mozzarella and the cream cheese in a small nonstick pot over medium heat, or in a bowl in the microwave.
  3. Mix until the mozzarella and cream cheese melts and incorporate. Add the other ingredients and mix well.
  4. Moisten your hands with olive oil and flatten the dough on baking paper to form a circle about 20 cm (8 inches) in diameter. You can also use a rolling pin to smooth the dough between two sheets of baking paper.
