Tips to make a thick strawberry sauce with no cornstarch

  • You can blend the strawberries once they’ve cooked down for a smoother sauce.
  • You can also chop your strawberries before cooking them.
  • Fresh strawberries are best for this recipe. However, if you’re using frozen strawberries, make sure you thaw them out as you do not want the extra moisture in the recipe if is it to be thick.

  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • 1 teaspoon of sweetener (I used Swerve sweetener)

To make the strawberry sauce, combine the strawberries, and lemon juice in a saucepan. 

 

Cook over medium heat for 10 – 12 minutes or until the strawberries are tender, making sure to stir every now and then.

Then mash the strawberries with a fork and cook until you have a thick sauce.

Stir in the vanilla extract and sweetener and set aside until you’re ready to drizzle your pancakes or cheesecake with simple yet delicious strawberry sauce.

How to thicken strawberry sauce without cornstarch

Boiling down the sauce until most of the moisture evaporates is a very effective way to thicken strawberry sauce if you do not have or want to use cornstarch. This is the method I used in this recipe.

Other methods include:

Xanthan gum – Sprinkling a thickening agent like xanthan gum into the sauce is another effective way to make the strawberry sauce thicker. If you want to use xanthan gum, wait until the strawberries have started to release their juices, then sprinkle (do not dump as it will clump) ⅛ teaspoon of xanthan gum over the strawberry sauce, then stir.

Gelatin  – Gelatin is another effective way to thicken up a strawberry sauce without cornstarch. Dissolve a ¼ – ½ teaspoon of gelatin in some liquid and add this to the strawberry sauce while it simmers and thickens up.
