Tips & Tricks

To make the no bake keto cheesecake with 3 ingredients the best it can be, make sure you are using quality ingredients. Anything less than that will result in watery cheesecake.

When buying cheese for this recipe, make sure it is cream cheese in a block or a creamy mascarpone, or even ricotta.

What is the Best Sweetener for this Recipe?

I used powdered Lakanto Monkfruit Sweetener with Erythritol because it is low carb sweetener and has nice blending properties. If you do not have it on hand, you can opt for any other kind of low-carb sweeteners, such as Swerve Confectioners Sweetener Powder or So Nourished Powdered Erythritol Sweetener. Just make sure it’s powdered for the best texture!

I do not recommend the use of granulated sweeteners as the texture of the cheesecake fluff will become more grainy rather than smooth and fluffy.

Does the Fluff Need to be Chilled Before Eating?

It is best to chill this keto 3 ingredient cheesecake fluff before consuming it. You can chill it while still in a piping bag or chill it after piping it into the dessert bowls. 

Does Cheesecake Fluff Taste like Actual Cheesecake?

Yes, it does taste like cheesecake, minus the crust. Still, if you are missing some of the crunchiness from the crust, you can compensate for that by adding some crunch on the top.

Storage

To store place in a fridge for up to 3 days. I do not recommend freezing this cheesecake fluff, because when thawed it may become too watery.
