Fathead dough is a gluten-free keto dough made with mozzarella, cream cheese, egg, and a low carb flour. It can be used for many recipes including fathead pizza, fathead bagels and even fathead calzones. But, do you know that you can also use fathead dough to make keto fathead cookies? You sure can and so here is the recipe for these delicious keto fathead sugar cookies that you must try for the holidays.

Made with just a handful of keto ingredients, these fathead cookies only contain 0.5 grams of carbs per serving and are soft, buttery and perfect for a keto Christmas treat!

Ingredients for fathead sugar cookies

  • 2 oz. cream cheese
  • 1 cup mozzarella, shredded
  • 3 tbsp butter, softened
  • 1/2 cup powdered Erythritol
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 tsp baking powder

 

How to make keto fathead sugar cookies

To make these sugar free fathead sugar cookies, you should first gather all of your ingredients in one place.

Then, melt the cream cheese and mozzarella in a small bowl, microwaved for 1 minute. Making sure to mix well to combine.

 

In a separate bowl cream the butter, sweetener, vanilla and egg whites. Then add baking powder and almond flour and continue mixing.  The mixture will be crumbly.

At this point, add the cream cheese mixture to the flour mixture and stir. 

Hand work dough until fully combined and shape the fathead dough into a ball which you will let rest for 5 minutes.

Shape into a cylinder (like store bought cookie dough), and, refrigerate 30 more minutes.

Cut this easy to make keto fathead cookie dough into 12 slices. Then bake at 350 F in a preheated oven for 15-18 minutes.
