Instead of using plain flour and classic sugar, which aren’t recommended when following a low carb  lifestyle, this recipe calls for fine almond flour and Swerve, plus a few minutes. How simple is that? Really that is all you have to do!

  • 1 large egg
  • 1 tsp vanilla extract
  • 1 pinch salt

Next, in a bowl, beat the butter and sweetener together until a pale mixture is formed.

 

Next, beat in the egg and vanilla until smooth, then fold in the almond flour and stir using a spatula.

 

Once everything is mixed well, it should look like this:

 

Once you have a smooth mixture, spoon it into the piping bag and pipe the mixture on a baking sheet lined with parchment paper.

 

Then  preheat the oven to 370F and pop the cookies in to a freezer for 10 minutes.
