The best answer I can give is that  these are no-fail cookies, they taste amazing, and are ready in less than 30 minutes.

 

What are keto magic cookies?

These are referred to as keto magi cookies simply because they’re made with no flour. Instead, these cookies are made with ingredients like eggs, coconut oil, butter and chocolate chips and make the most delicious cookies.

 

The cookies are slightly crunchy on the outside and chewy on the inside. They are packed with walnuts and sugar-free chocolate chips, and most importantly they are keto-friendly.

 

Tips to make magic cookies:

  1. Use desiccated coconut instead if shredded coconut. These sugar free cookies have a high fat content. The desiccated coconut will help them to keep their shape during baking. You can still use shredded coconut if that is what you have, however, by using shredded coconut or coconut chips nothing will capture the fat and the cookies will be flat.
  2. Choose the right chocolate chips for this recipe. A good idea is to use Lily’s chocolate chips for this recipe. Either the dark chocolate chips or the milk chocolate chips will work.
  3. Choosing the nuts; although the recipe calls for the walnuts, you can use pecans or almonds as well if you have these instead.

These are the ingredients you will need to make these cookies:

  • 2 tbsp coconut oil, softened
  • 2 tbsp butter, softened
  • 2 egg yolks
  • 1 tsp vanilla
  • 2 tbsp Lakanto sweetener
  • ½ cup sugar-free chocolate chips or chopped chocolate
  • ½ cup desiccated coconut
  • 1/3 cup chopped walnuts

To start gather all of your ingredients in one place.

Then preheat the oven to 350F and line a baking sheet with parchment paper.

 

In a bowl, stir together coconut oil, butter, vanilla, and egg yolks.

 

Then fold in the sweetener, and stir to combine.

 

Once smooth, stir in chocolate chips, coconut, and chopped walnuts.

 

Mix these in until the mixture is smooth.

 

Next, scoop the cookies with a small scoop onto a baking sheet making sure to space them about an inch apart.

Then gently wet your fingers with some water and go around the edge of each to give them a smooth finish.

Bake the magic keto cookies for 15 minutes.

Once they’ve been in the oven for 15 minutes, take them out and cool the cookies on a wire rack before serving.

 

How to store

You can store these magic cookies in a freezer, in an airtight container for up to one  month. You can also store these in the fridge for 7 days.

 

Magic cookies substitutes

If you do not have all the products listed above, you can substitute with some others. For example,

  • You can substitute walnuts for pecans or almonds.
  • You can substitute sugar free chocolate chips for chopped 70 or 80% dark chocolate.
  • You can also substitute the Lakanto sweetener with another type of white keto sweetener or your favorite keto brown sugar alternative.
