Tips and tricks for making almond flour sourdough bread
1. For the best result, use the right flour. For me, I use fine almond flour rather than the coarser almond meal. This will give the bread the desired results. I used and will recommend Blue Diamond Almonds finely sifted almond flour which I often purchase from Amazon for this recipe.
This has been my favorite type of almond flour lately. I've used many other brands before and this one gives me the best results It's also pretty reasonably priced too!
2. To get the right taste, do not skip the use of vinegar. You can use raw apple cider vinegar if you want to achieve that classic sourdough bread recipe taste.
3. Make sure you use the right flax. Flax powder or ground flaxseed for the best results. I get my ground flaxseed from Terrasoul Superfoods on amazon at a fairly reasonable price.
Any type of ground flaxseeds will work in this recipe. However, for the best results finely ground flaxseeds with a smooth, powdery texture, like Terrasoul Superfoods Ground Flax Seeds is what you need..
As with any other bread you wish to bake, let the bread rest for 15 minutes before baking so the baking powder can develop and make your bread light.
4. Psyllium husk powder is very important to this bread. Don’t leave it out.
Any type of psyllium husk powder will work. But lately, I've been liking and using this brand. It's very important to use psyllium husk powder to help this bread recipe (and other keto-baked goods) bind properly. Without it, the bread will crumble.
NOTE: This is a carved sourdough bread recipe. You do not have to carve yours at all and I just did it for the fun of it. However, if you do want to carve you’re then simply, dust the surface with 1-2 tbsp fine almond flour and carve with a carving tool or very sharp knife.

Ingredients for sourdough bread
To make this recipe, you will need:
Dry ingredients
- 1 ¼ cup fine almond flour
- ¼ cup psyllium husk powder
- 1/3 cup fine coconut flour
- ¼ cup flax seed powder
- 1 tsp baking powder
- ¾ tsp pink Himalayan salt
Wet ingredients
- 5 medium egg whites
- 1 medium egg
- ½ cup buttermilk or keto buttermilk (½ cup unsweetened almond milk + ½ tbsp lemon juice)
- 3 tbsp raw apple cider vinegar
- ½ cup of warm water
About keto sourdough starter
I did not use the traditional sourdough starter for this recipe since it is very high in carbs. In fact, I did not use any sourdough starter for this recipe. Therefore there is no proofing or extra kneading required for this bread. Obviously, this is not the traditional way to make sourdough bread, but it is a healthy, delicious way to eat sourdough bread on keto without the extra carbs.
How to make keto sourdough bread
To make this recipe, first, gather all of your ingredients in one place.
Next, in a mixing bowl, combine the almond flour, psyllium husk powder, coconut flour, flax seeds powder, and salt.
In a separate bowl, beat egg whites, egg, buttermilk, and apple cider vinegar.
Then fold the wet ingredients into the dry ingredients together.
Gradually add water and mix until you have a nice dough. At this point, you should consider preheating your oven to 375F.
Dust the kitchen surface with some almond flour and transfer the dough onto the surface. Gently knead until you have a nice round ball.
Place the dough in a greased baking dish. Let the bread rest for 15 minutes.
OPTIONAL: Dust the bread with almond flour, and carve the bread making the desired shape.
NOTE: If you’re making a carved sourdough bread, cover the bread with aluminum foil to prevent the almond flour from burning. Bake the bread for 15 minutes. Reduce the heat to 300F and bake the bread for 1 hour. Uncover and bake for an additional 15 minutes.
NOTE: If you are not carving the bread, just bake it as described, without covering it with aluminum foil.
Once baked, cool the bread for a few minutes.
Then slice and serve your yummy keto sourdough bread and top it with a topping of your liking. You can try it out with avocado toast and a fried egg for example.
How many net carbs are in sourdough bread?
Typically regular sourdough bread made with ingredients like all-purpose flour contains up to 36 grams of carbs in just one slice. However, with this low carb sourdough bread recipe, you can expect to get merely 2.5g of net carbs per slice.
How to store
To store this keto sourdough bread, you can keep it in the fridge for up to 4 days or in a freezer wrapped in foil and freeze it for up to 6 months.

FAQs about keto sourdough bread
Can you make sourdough starter with almond flour?
Personally, I have tried to make an almond flour sourdough starter and I used it in my keto-friendly sourdough pancakes recipe. From experience, I know that the best sourdough starters are made with wheat flour, or gluten-free flour like brown rice flour, oat flour, sorghum flour, Teff, or buckwheat flour. But, in a pinch almond flour sourdough starter can work too although it is not as amazing as a regular sourdough starter. I choose not to use it for this particular recipe.
To date, I have never made a coconut flour sourdough starter though.
Is sourdough keto?
No, it is not. Traditional sourdough is not keto since it is made with a sourdough starter. Sourdough starter is a leavening agent that traditionally consists of fermented flour and water. In recent years, other types of gluten-free flour have been used to make sourdough starters but all of them are high in carbs.
