Sourdough bread recipes are quite popular these days and with good reason. In downtimes, we love to bake, and sourdough bread is one of the few recipes that are worth making.

Is sourdough bread OK on keto?

sourdough bread

Not all sourdough bread recipes are made the same. If you come across sourdough bread made with all-purpose flour, then you cannot have it if you’re following a keto lifestyle. However, if it is made with gluten-free flour like almond flour and other low carb ingredients, like this recipe below, then you can enjoy it guilt-free.

This simple keto sourdough bread recipe makes a delicious low carb bread with a golden crust and chewy interior that is keto-friendly.

Although it may seem impossible to make a good sourdough bread recipe that meets the standards of keto, I assure you that you can make an amazing low carb sourdough bread recipe and I’ll show you how to do this. All you’ll need are some simple keto ingredients that you likely already have in your pantry and you’re all set to start!

Tips & Trick for Making Almond Flour Sourdough Bread

1. For the best result, use the right flour. For me, I use fine almond flour rather than the coarser almond meal. This will give the bread the desired results. I used and will recommend Blue Diamond Almonds finely sifted almond flour which I often purchase from Amazon for this recipe.

I always use this finely sifted almond flour for my keto recipes — it gives my dough the perfect texture every time.

 2. To get the right taste, do not skip the use of vinegar. You can use raw apple cider vinegar if you want to achieve that classic sourdough bread recipe taste.

3. Make sure you use the right flax. Flax powder or ground flaxseed for the best results. I get my ground flaxseed from Terrasoul Superfoods on amazon at a fairly reasonable price.

As with any other bread you wish to bake, let the bread rest for 15 minutes before baking so the baking powder can develop and make your bread light.

4. Psyllium husk powder is very important to this bread.  Don’t leave it out.

Any type of psyllium husk powder will work. But lately, I've been liking and using this brand. It's very important to use psyllium husk powder to help this bread recipe (and other keto-baked goods) bind properly. Without it, the bread will crumble.

NOTE: This is a carved sourdough bread recipe. You do not have to carve yours at all and I just did it for the fun of it. However, if you do want to carve you’re then simply, dust the surface with 1-2 tbsp fine almond flour and carve with a tool like this one or very sharp knife.

To make this recipe, you will need:

Dry ingredients

  • 1 ¼ cup fine almond flour – I use a high-quality almond flour that I always order on Amazon. It’s smooth and perfect for all my keto baking needs. You can get it here on Amazon.
  • ¼ cup psyllium husk powder – This is a game-changer for creating the right texture in keto bread. I love this particular brand, which I get from Amazon. You can find it here.
  • 1/3 cup fine coconut flour – For a great coconut flour, I always trust this one from Amazon. It’s perfect for keto baking. Grab yours here.

  2. Glass Mixing Bowls – I used these glass mixing bowls to combine the dry and wet ingredients.
  3. Sharp Knife or Bread Lame – You need one of these for carving the sourdough bread, if you so desire. You can find an awesome bread lame here.
  4. Glass Baking Dish – You can use any baking dish you have on hand as long as it bakes evenly. If you need a great suggestion, this a a great glass baking dish on Amazon that bakes evenly and is super easy to clean!
  5. Non Slip Pastry Mat – Gluten free dough are tricky to work with —it’s often stickier, more fragile, and less elastic than traditional dough. Therefore using a non slip pastry mat like this one, helps to keep sticky gluten free dough from clinging to your counter and gives you a smooth, floured surface to roll and shape the dough that stays put while you work. It also makes cleanup wayyy easier!
  6. Bench Scraper/Dough Scraper – This is another handy tool that’ll help you make the best sourdough bread recipe. Again, because this dough is stickier, this tool makes it easier for you to lift and fold the dough without too much of a hassle.
  7. Aluminum Foil – You need some if you’re planning to carve the bread.
  8. Spoon or Spatula – To mix the ingredients together.

About Keto Sourdough Starter

I did not use the traditional sourdough starter for this recipe since it is very high in carbs. In fact, I did not use any sourdough starter for this recipe. Therefore there is no proofing or extra kneading required for this bread. Obviously, this is not the traditional way to make sourdough bread, but it is a healthy, delicious way to eat sourdough bread on keto without the extra carbs.

How to Make Keto Sourdough Bread

To make this recipe, first, gather all of your ingredients in one place. You also need some measuring cups or an accurate food scale to measure the ingredients accurately.

Next, in a large mixing bowl (these are my fav glass mixing bowls), combine the almond flour, psyllium husk powder, coconut flour, flax seeds powder, and salt.

In a separate bowl, beat egg whites, egg, buttermilk, and apple cider vinegar.

Then fold the wet ingredients into the dry ingredients together.

Gradually add water and mix until you have a nice dough. At this point, you should consider preheating your oven to 375F.

Dust the kitchen surface with some almond flour and transfer the dough onto the surface. Gently knead until you have a nice round ball. I like using a non-slip pastry mat here—it helps keep the mess to a minimum and gives you a good surface for kneading.

Then place the dough in a greased glass baking dish. Let the bread rest for 15 minutes.

FAQs about Keto Sourdough Bread

Can you make sourdough starter with almond flour?

Personally, I have tried to make an almond flour sourdough starter and I used it in my keto-friendly sourdough pancakes recipe. From experience, I know that the best sourdough starters are made with wheat flour, or gluten-free flour like brown rice flour, oat flour, sorghum flour, Teff, or buckwheat flour. But, in a pinch almond flour sourdough starter can work too although it is not as amazing as a regular sourdough starter. I choose not to use it for this particular recipe.

To date, I have never made a coconut flour sourdough starter though.

Is sourdough keto?

No, it is not. Traditional sourdough is not keto since it is made with a sourdough starter. Sourdough starter is a leavening agent that traditionally consists of fermented flour and water. In recent years, other types of gluten-free flour have been used to make sourdough starters but all of them are high in carbs.

I have tried a keto sourdough start with almond flour for another sourdough keto recipe that turned out okay in the past. Have a look at my gluten free sourdough pancakes to see how to make them.
