Sourdough Starter is often referred to as wild yeast, made from flour, water, and the wild yeast in the air around us. Not all sourdough starters are okay on keto, especially those made with white or wheat flour. However, sourdough start made with low-carb flour and other low-carb ingredients is ok on keto as they’re low in carbs. 

How Many Carbs are in Sourdough Pancakes?

The carbs in gluten free sourdough pancakes depend on the ingredients used in the recipe. For this recipe which uses keto-friendly ingredients, there are 1.6 grams of carbs in these sourdough keto pancakes. 

How to Make Keto Sourdough Starter for Pancakes?

These sourdough gluten free pancakes start with a good sourdough starter. The starter I used is used as a starter that will give you taste, but also amazing rising properties. Here is the almond flour starter recipe that is used in the recipe:

You will combine:

  • 2 cups almond flour
  • 1 tsp dry yeast
  • 1 cup of whey (in liquid form)Whey in liquid form is the clear, watery liquid left after straining yogurt or cheese. It’s full of natural bacteria and can help your keto sourdough starter ferment.

Directions:

  • Add almond flour to a glass jar. Pour over whey evenly. Stir to moisten. The mixture should be moist and crumbly, but not wet. Cover and allow to stand in a warm place for 24 hours.

Tools Needed

Mixing bowls – You need these to store, whisk and mix the batter and the ingredients before hand.
Whisk – You need a good whisk to mix the ingredients together.

Ingredients Needed For The Pancakes

To make these pancakes you will need:

  • Almond flour. Always choose blanched or finely sifted almond flour for the best texture. Almond meal is not the same as almond flour and it will make your pancakes gritty and dense.
  • Coconut flour. A little goes a long way here. This coconut flour helps to absorb excess moisture and keeps the pancakes fluffy.
  • Baking powder. This is essential for some extra lift and fluffiness. Make sure it’s fresh for best results.
  • Granulated keto sweetener. I recommend using So Nourished Granulated Sweetener. It’s keto-friendly, measures just like sugar and dissolves easily.
  • Keto sourdough starter. Made with almond flour, coconut flour, and yeast, this tangy starter adds flavor and helps the pancakes rise naturally. (See instructions above for how to make it.)
  • Almond milk. Go for unsweetened almond milk to keep carbs low while adding moisture.
  • Egg. One small egg binds the ingredients and helps with structure. Room temperature is best.
  • Butter. Use melted butter for richness, or sub ghee for a dairy-free option.

How to Make Gluten Free Sourdough Pancakes

To start, gather all of your ingredients in one place.

Next, in a large bowl, whisk almond flour, coconut flour, baking powder, and Swerve.

Then stir in the sourdough starter, almond milk, egg, and butter.

Once mixed, the gluten free keto sourdough batter will look like this:

Heat a non-stick skillet over medium-high heat. Pour ¼ cup of the mixture onto the skillet. Cook the pancakes for 1 minute on each side.

Flip each pancake and cook for another minute.

Once done, serve warm with our easy keto maple syrup or some cream.

Recipe Variations

You can make these pancakes with coconut flour as well. As the coconut flour is liquid absorbing, you may want to reduce the amount. For every cup of almond flour, use ½ cup of coconut flour.

Try also making pancakes with a mix of hazelnut and almond flour. These pancakes will be very fragrant.

Can Sourdough Pancake be Made Overnight?

Yes, you can make these overnight. Combine starter and almond flour. Leave it out overnight. In the morning add the rest of the ingredients and stir well. Cook in a heated skillet.

How To Store

You can store pancakes in a fridge for up to two days.

If you want to freeze them, cool the pancakes to room temperature, stack pancakes in an airtight container, placing a piece of parchment paper between the pancakes. Freeze the pancakes for up to a month.
