If you’re making a pancake recipe that calls for eggs, and you don’t have eggs, there’s no need to worry. There are many ways to substitute for eggs in pancakes with kitchen staples. In fact, I’m sharing 21 easy ways to substitute eggs in pancakes below!

What do eggs do to pancakes?

Eggs are responsible for binding, lifting, and adding richness and flavor to pancakes. Without eggs, a good substitute, or a proper technique, you may end up with crumbly, flat pancakes. 

What are the best substitutes for eggs in pancakes?

The short answer:

  • Flaxseed egg
  • Chia seeds
  • Unsweetened applesauce
  • Mashed ripe bananas
  • Rehydrated puréed prunes
  • Rehydrated puréed dates

The most common ways to substitute for eggs in pancakes

Flaxseed egg

In case you’re making pancakes and have no eggs, ground flaxseeds, or flax meal, mixed in water will work just fine as an egg replacer. To substitute one egg in a pancakes recipe, mix 1 tablespoon of ground flaxseed mixed with 3 tablespoons of hot water. Let this mixture gel for a while, then use this flaxseed egg just like you’d use a real egg!

Chia eggs

Like flaxseed meal, chia seeds can be used to make a good egg replacer as well. To make it, you will need 1 tablespoon of ground chia seeds and 3 tablespoons of water. Mix well, let it sit until it has gelled, and then use this to replace one egg. 

Note: Chia seeds will work based on the type of flour used in a pancake recipe. It works really well for pancakes made with all-purpose flour.

However, if you’re making a basic coconut flour pancake recipe, you’ll find it very difficult to get chia eggs to hold those pancakes together and prevent them from crumbling. I’m not saying it’s impossible, but I’ve yet to get chia eggs to work for coconut flour pancakes. 

Unsweetened applesauce

Thinking of ways to make pancakes without eggs? Unsweetened applesauce is a good bet. Unsweetened applesauce works because it adds moisture to pancakes and helps with binding so you get thick, fluffy, flavorful pancakes without the eggs!

¼ cup of unsweetened applesauce is enough to replace one egg. Without the eggs, I also suggest adding an extra ½ teaspoon of baking powder to help the pancakes lift better.

Applesauce will change the flavor of your pancakes a bit, so keep this in mind. Or, add a spice like cinnamon to make delicious apple cinnamon pancakes!

Mashed, ripe bananas

Bananas are another easy egg substitute for pancakes. Mashed, ripe bananas will add moisture and help with binding. Usually, 1 large, ripe banana is enough for each cup of flour. Mash the banana well, then add it to your pancake batter. I recommend adding an extra ¼ or ½ teaspoon of baking powder to help add some fluffiness to the pancakes made without eggs.

You should note that bananas will change the flavor of your pancakes, so keep this in mind if you prefer traditional pancakes.

Rehydrated puréed prunes

Rehydrated, puréed prunes will add lift and moisture to recipes like pancakes. Usually, ¼ cup of puréed prunes with an additional 1/2 teaspoon of baking powder can adequately replace one real egg according to Vitamix.com.
The prunes change the flavor and color of your pancakes. Also, prunes are sweet, so reduce the other sources of sugars and sweeteners in the pancakes to balance the flavor.

Rehydrated puréed dates

Similar to prunes, puréed dates can also be used to substitute eggs in pancakes. On its own, the puréed dates will not add lift to the pancakes. Therefore, replace 1 real egg with ¼ cup of rehydrated puréed prunes and an extra ½ teaspoon of baking powder. Also, adjust the sweetener in the original recipe since dates are sweet.

Rehydrated puréed raisins

Have some raisins in your kitchen? Use those in your pancakes to replace real eggs! Rehydrate them, purée them, then add them to the pancake batter with some extra baking powder. Reduce the other sources of sweetness in the pancake recipe to offset the puréed prunes. 

Plain silken tofu

A great dairy-free substitute for eggs is plain silken tofu. It needs to be blended well before being incorporated into your pancake batter. And it works really well for making moist, dense pancakes that still manage to have a light fluffy texture. Also, plain silken tofu is bland, so you can still enjoy your traditional pancake flavor with this egg alternative. 

Generally, ¼ cup of well-puréed, plain silken tofu can be used in place of 1 egg. 

Baking powder, water, and oil

You may be out of the pureed fruits and the silken tofu listed above, but I’m sure you have access to baking powder, water, and oil. If so, you have the makings of an excellent egg substitute for your pancakes! 

This mixture will add moisture, fluffiness, and some flavor to the pancakes. Simply mix 1 teaspoon of oil, 2 tablespoons of water, and 2 teaspoons of baking powder together. Use this to replace one egg in your pancake recipe. 

Aquafaba 

If you have a can of chickpeas, then you can use the liquid inside, called aquafaba to make a great vegan egg replacement for pancakes. 

When added to pancakes, whipped aquafaba can make them light and fluffy. The flavor will cook off, so your pancakes will retain their original flavor.

Want to use this substitute? Whip 3 tablespoons of aquafaba and use it to replace 1 egg.

Aquafaba, the liquid inside a can of chickpeas, whips up into a stiff meringue that delivers light, fluffy pancakes with no eggs at all.

Vinegar and baking soda

Another great egg substitute for pancakes made with staple ingredients is a combination of 1 teaspoon of baking soda and 1 tablespoon of vinegar to replace 1 egg. This mixture will make for airy, light, fluffy pancakes with no eggs. 

Yogurt

Plain yogurt is an excellent milk substitute for pancakes, a very handy substitute for eggs in cake recipes, and it’s also a great egg substitute for pancakes too!

Instead of eggs, you can use plain yogurt to make fluffy pancakes. A good conversion ratio is ¼ cup of plain yogurt in place of one real egg.

Plain yogurt is the best option as it has no added flavors or sweeteners that will affect the overall flavor of the pancakes, especially if you’re following a recipe and not just freestyling. If you’re vegan or dairy free, you can use coconut yogurt instead.

Avocado puree

Avocado is often used to make guacamole, but the fruit can be used as an egg alternative in pancakes too! Avocado puree will add a few green streaks or even add a green hue to our pancakes though!

¼ cup of mashed avocado can substitute for an egg in pancakes. 

Arrowroot Powder

Arrowroot powder is a starch used mostly to thicken up liquids. However, if you’re all out of eggs but want to make some pancakes this starch can be used as a great egg replacement.

Arrowroot powder helps to bind and thicken pancakes made with no eggs. It’s also great at adding elasticity and fluffiness to batters. In fact, most store-bought pancake mixes that only require you to add water, contain some form of starch.

Therefore, a starch such as arrowroot powder is an excellent sub for eggs in pancakes.

To make the equivalent of 1 egg, mix 1 tablespoon of arrowroot powder and 3 tablespoons of water together. Add this to the pancake batter.

Cornstarch

Most people have cornstarch in their pantries. Therefore cornstarch is a very convenient egg sub for pancakes.

Mix 1 tablespoon of cornstarch and 3 tablespoons of water to substitute for an egg in pancakes. Cornstarch will thicken pancakes and make them fluffier. 

Nut Butter

If you can’t use eggs, creamy nut butter can work too. Nut butter will change the flavor of your pancakes so keep this in mind. Otherwise, 3 tablespoons of nut butter can be used in place of 1 egg. You can use almond butter, peanut butter, pecan butter, or other nut butter available to you.

Carbonated water or sparkling water

Carbonated water can add moisture to pancakes but it also acts as a leavening agent for pancakes by trapping air bubbles, which makes the pancakes lighter and fluffier. You can use ¼ cup of carbonated water in place of one egg. 

Just Eggs

Want a vegan substitute for eggs in pancakes? Just Eggs is a great choice. Just Eggs is a plant-based egg alternative with a similar texture to whisked eggs. Just Eggs is made with water, mung bean protein isolate, canola oil, some spices, and thickeners. 

3 tablespoons of just eggs is a great substitute for 1 real egg in a pancake recipe.

Egg replacer

Egg replacer by Bob’s Red Mill is another excellent egg substitute that you can keep stored for longer periods. Therefore, this egg alternative ensures you always have something to use in a pinch.

Use 1 tablespoon of egg replacer mixed with 2 tablespoons of water for every real egg you’re trying to replace in a pancake recipe. 

Mayo

Mayo is made by emulsifying eggs, oil, and an acid such as vinegar. Therefore, mayo is an excellent egg substitute for pancakes. It works because it adds much-needed fat and moisture and makes pancakes and other baked goods super tender and fluffy.

And don’t worry, its flavor quickly disappears once it’s heated, so your pancakes won’t taste like mayo.

You can use 3 tablespoons of mayonnaise to replace 1 egg. 3 tablespoons of mayonnaise makes the perfect substitute for an egg in pancakes!

White vinegar

Mix 2 teaspoons of vinegar into 1 cup of room-temperature milk. Let that sit for 10 minutes. Then add all the other pancake ingredients, including 1 teaspoon of baking powder and 1 teaspoon of baking soda, and mix well. 

Let the batter sit for 10–15 minutes before making the pancakes. This pancake batter with vinegar will make the fluffiest pancakes!

Ingredients

  • 1 cup plain flour
  • 1 tbsp baking powder
  • ¾ cup unsweetened almond milk
  • ¼ cup coconut yogurt
  • 2 tbsp coconut sugar

Instructions
