You have to try out this easy keto sugar-free pecan pie. Made with an amazing almond flour pie crust and an egg-based filling, maple extract, and a few other ingredients you likely have in your home, this easy, gluten-free, sugar-free pecan pie is truly amazing!

What makes good pecan pie?

The good perfect pie starts with perfect pecan nuts. Find pecans that are not stale and that have a good shape. You can also chop those pecans and use chopped on the pie.

The second part of the good pecan pie is the crust. The recipe I share is brilliant, but the baking dish you use is also very important. You can bake in a spring form or Pyrex baking dish. Do not ever bake in disposable aluminum pie pans.

The final part of a good pecan pie is the filling. The filling for this recipe is made is with eggs. Make sure you cook egg custard so the filling is not soupy, but just right.

Ingredients for sugar-free pecan pie

The crust:

  • 1 ½ cup almond flour
  • ¼ cup granulated Erythritol
  • ¼ cup melted butter

The filling:

  • ¾ cup butter
  • ½ cup Swerve brown sugar substitute
  • ½ cup Swerve confectioners sweetener
  • 1 ½ tsp maple extract
  • 3 eggs
  • 1 ½ cup pecan halves

Pecans are one of the low carbs nuts that you can eat on keto. In every 1 oz serving of pecans, there are 1.21 grams of net carbs

Because pecans are low in carbs pecan pie is also very low in carbs. In every slice of sugar-free pecan pie, there are 1.2 grams of net carbs! 

 

How to make keto sugar-free pecan pie

To make gather all of your ingredients in one place. Then proceed to make the pecan pie crust.

To make the crust preheat the oven to 350F, then in a bowl, combine almond flour, and Erythritol. Add melted butter and stir until you have a coarse mix.

 

 Transfer the mixture to a pie plate and press firmly, on the bottom and sides.

 

Poke the crust a few times and bake for 10 minutes. Place the crust aside, while you make the filling.

 

Make the keto pecan pie filling

To make the filling melt the butter in a saucepan with sweeteners. Cook for 2 minutes.

 

Remove from the heat and stir in maple extract. Once the sauce is cooled a bit, add in eggs and beat well.

 

Pour the mixture into the crust and top it with pecan halves, then bake the pie for 45-50 minutes.

 

Cool the pecan pie before serving and slicing.

 

Other sugar-free pecan pie crust options

For this recipe, you have multiple crust options such as almond flour, coconut flour, or a mix of these two.

Coconut flour pecan pie crust

For the coconut flour pecan crust, you will need 2 eggs, 1 tbsp coconut oil, ¼ cup Swerve sweetener, 1 pinch salt, 1 cup coconut flour, and ½ cup cold butter cut into cubes.

To make it, preheat the oven to 400 degrees F. Then whisk the eggs and oil in a food processor or stand mixer. In another bowl whisk the remaining ingredients together until combined.

Then pour the dry and wet mixture into a food processor. Also, add the cubed butter and process by pulsing until it looks like crumbles.

Next, spray a pie plate with cooking spray and pour crumbles into the pie plate, and press with your hands to form dough right in the pie plate. Alternately you can also roll out the dough between two pieces of parchment paper and flip it over into a 9-inch pie plate.

Using a fork randomly make holes into the bottom of the crust, then bake the crust for 10 minutes or until golden. Lastly, Cover the crust edges with aluminum foil if using this for a savory or sweet pie that needs to be baked again, otherwise it will burn.

Once cooled out of the oven, add your filling.

To make a pecan pie crust, you can use pecan and grind it into a fine meal, you can also use a store-bought pecan meal. 

 

How to store (fridge and freezer)

You can store the pecan pie in a fridge, covered with aluminum foil for 3-4 days. 

Can you freeze pecan pie?

Yes, you can freeze it. Wrap each piece individually and store it on a flat surface. To reheat, allow the pie to sit at room temperature for about ten minutes to take the chill out, then heat it for 10 minutes in a 350-degree oven. This will help crisp up the crust without baking it further.
