The good perfect pie starts with perfect pecan nuts. Find pecans that are not stale and that have a good shape. You can also chop those pecans and use chopped on the pie.

The second part of the good pecan pie is the crust. The recipe I share is brilliant, but the baking dish you use is also very important. You can bake in a spring form or Pyrex baking dish. Do not ever bake in disposable aluminum pie pans.

The final part of a good pecan pie is the filling. The filling for this recipe is made is with eggs. Make sure you cook egg custard so the filling is not soupy, but just right.

Coconut flour pecan pie crust

For the coconut flour pecan crust, you will need 2 eggs, 1 tbsp coconut oil, ¼ cup Swerve sweetener, 1 pinch salt, 1 cup coconut flour and ½ cup cold butter  cut into cubes.

To make it, preheat oven to 400 degrees F. Then whisk the eggs and oil in a food processor or stand mixer. In another bowl whisk the remaining ingredients together until combined.

Then pour the dry and wet mixture into a food processor. Also, add the cubed butter and process by pulsing until it looks like crumbles.

Next spray a pie plate with cooking spray and pour crumbles into pie plate and press with your hands to form dough right in the pie plate. Alternately you can also roll out dough between two pieces of parchment paper and flip over into a 9 inch pie plate.
