- 1 large egg
- ¼ cup cream cheese
Filling:
- 5lb. grated zucchinis (you can peel if not organic)
- 1 ½ teaspoon apple pie spice or equal amounts pumpkin pie spice
- ¼ teaspoon ground nutmeg
- 2 tablespoons lemon juice
- 3/4 cups Sukrin gold
- ¼ teaspoon xanthan gum
Egg wash:
- ½ egg (beat egg and use just half)
- ½ tablespoon water

To make the crust, in a food processor, combine almond flour, coconut flour, cinnamon, xanthan gum, and baking powder. and process to blend.
Next, add egg and cream cheese and then process until coarse crumbs form.
Then you will shape the mixture into a dough ball and wrap in plastic wrap.
Flatten the dough with a rolling pin and refrigerate for at least one hour. Two hours is ideal.
