  • As the pie crust is made with almond flour, eggs, and cream cheese, we suggest that you refrigerate your pie crust before use. This is so because the chilled dough will be super easy to work with.
  • To achieve that luscious apple pie filing flavor, feel free to use apple pie spice, but you can also toss in more nutmeg or ginger. The key to reaching that authentic apple flavor is in the cooking process. Once you add Sukrin gold, which is a natural low carb brown sugar alternative,  to your zucchinis, make sure that you cook the zucchinis until dark in color.
  • If you find your filling is a bit soggy or simply do not have time to cook it for a longer period of time, simply add in 2-3 tablespoons of almond flour, or finely ground almond meal. The almond meal or flour will soak up a bit of the liquid and actually add some volume to the keto apple pie filling.

Crust

Filling:

  • 5lb. grated zucchinis (you can peel if not organic)
  • 1 ½ teaspoon apple pie spice
  • 2 tablespoons lemon juice
  • Sukrin gold
  • ¼ teaspoon xanthan gum

Egg wash:

  • ½ egg (beat egg and use just half)
  • ½ tablespoon water

It is quite simple to make this recipe. First, you will gather all of your ingredients, then proceed to follow the steps outlined below.

How to make a keto apple pie crust

To make the crust, in a food processor, combine almond flour, coconut flour, cinnamon, xanthan gum, and baking powder. and process to blend.

 

Next, add egg and cream cheese and then process until coarse crumbs form. 

 

 

Then you will shape the mixture into a dough ball and wrap in plastic wrap.

Flatten the dough with a rolling pin and refrigerate for at least one hour. Two hours is ideal.

 

How to make the keto apple pie filling

To make the low carb pie filling, saute the zucchinis in lemon juice for 5 minutes.

 

Next, add the apple pie spice and Sukrin gold and cook over medium heat for 20 minutes.

You will then remove from the heat and stir in xanthan gum.

 

Now you will need to assemble everything together. First, remove the dough from the fridge and divide into 2 equal parts.

Roll the first part of the dough between two pieces of parchment paper, so it fits in a 7-inch pie pan. Make sure you butter the pie pan before adding the crust to the pan.

Next, peel the top paper from the dough. Then gently transfer the dough into the pan and peel the top paper.

Stick the dough to the pie pan, and cut the excess dough off with a knife.

 

Next, spoon the filling into the crust.

Roll the second piece of the dough, as was done with the first, and use it to cover the filling.

Cut the holes in the middle or desired shape for the steam to escape.

Also, don’t forget to brush the crust with egg wash.

You will then bake the keto pie for 30-35 minutes (mine took 30 minutes), then cool the pie on a wire rack for 30 minutes.
