Tips and tricks for chia pudding

  • When making chia pudding you have two options; use white or black chia seeds. There is no difference in flavor or texture, just in appearance. You can use any of these.
  • Making chia pudding is quite easy. It only takes a few minutes to combine chia seeds, some liquid (nut-based milk like these almond milk alternatives), and desired add-ins like cacao powder, keto sweetener, or fruits.
  • For the best chia pudding, the ratio of chia seeds to liquid is very important. Most people don’t want a chia pudding that is either soupy or so thick that it’s dry. I find the perfect ratio is as described in the recipe below.
  • Once you combine chia seeds and milk, leave it aside for 30 minutes. Make sure you stir at least twice during this time, so chia seeds can nicely pick up the liquid.
  • Also, when making the chia pudding make sure you first place chia seeds in a bowl, then add the milk. It will be easier to mix these. If you place chia over milk, they will kind of just float.
  • You can also combine chia seeds and milk and leave them in a fridge overnight for a delicious breakfast. Make sure you leave it out so it can come to room temperature before consuming.

Then add coconut milk, vanilla, and peanut butter and whisk or blend until smooth. 

Next, add chia, stir and refrigerate for 30 minutes.

Serve in a dessert glass and top with whipped cream before serving.

The texture is thick and creamy, and a bit jiggly just like regular pudding. If you want a very smooth mixture, you can process the chia seeds with milk in order to get an extra smooth pudding.
