This quick and easy shrimp fajitas recipe is super flavorful and comes together in a little under 25 minutes. Made with just a handful of ingredients, this recipe is guaranteed to be a hit!

When it comes to delicious and easy recipes, I know that spicy fajitas are guaranteed to get the approval of my entire family. Therefore, I always gravitate towards this recipe when I am lacking inspiration for dinner time. 

Whether it is chicken fajitas, fajita veggies or shrimp fajitas, they go fast once they’re on the table. 

This shrimp fajita recipe is made with only 6 ingredients and is made in less than 30 minutes which is a plus for me too.

The great thing about this recipe is that the first time I made it for my whole family, they requested that I serve it again that same week!

And, because this recipe is made with healthy vegetables and seafood, there is absolutely noting wrong with serving it often as requested. 

Ingredients for making shrimp fajitas

For the fajita shrimp

  • 1 tbsp fajita seasoning
  • 1 lb shrimp (devine and shelled)
  • 1/2 tbsp olive oil
  • 1/4 tsp salt

For the fajitas veggies:

  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large green bell pepper
  • 1 large red onion
  • 1/2 tbsp olive oil
  • 1/2 tbsp fajita seasoning
  • 1/4 tsp salt

Fajita seasoning mix

I make my very own homemade fajita seasoning mix with a combination of salt, a sweetener of choice, paprika, onion powder, garlic powder, cayenne pepper, cumin and oregano. You can find this easy fajita seasoning recipe here. 

Other wise, make your own with a mixture of:

  • Chili powder
  • Oregano
  • Paprika
  • Onion powder
  • Garlic powder
  • Cayenne pepper
  • Ground cumin
  • A sweetener of choice
  • Salt

This is a great idea if you do not want to go out and purchase fajita seasoning packets or if you do not want to use these due to additives.

How to make shrimp fajitas in a large skillet

Gather all the ingredients you’ll need for this skillet shrimp fajita recipe.

Slice the bell peppers and onion into thin slices. Then, clean and devine the shrimp and season with the fajita seasoning and salt.

Heat up the olive oil in a non stick skillet or cast iron skillet on medium heat, then cook the seasoned shrimp for 7 minutes. Flip the shrimp half way through cooking.

Next, add the olive oil, bell peppers, onions, salt and fajita seasoning to that same skillet and cook for approximately 4 minutes on medium heat.

Once the fajita vegetables are cooked, add the cooked shrimp to the skillet of vegetables and toss together if you’d like. Serve warm with your favorite fajita sides and toppings.

Can you make shrimp fajitas on a sheet pan in the oven? You sure can. If you love sheet pan dinners, then you’ll love this one. The shrimp fajitas in the oven will take 20 minutes longer, but, it is almost completely hands off. Here’s how to make oven baked sheet pan shrimp fajitas:

  • Preheat the oven to 350 degrees and line a sheet pan with some parchment paper.
  • Next, prepare the vegetables and the shrimp.
  • Place the vegetables, tossed with the spice mix and salt, on the lined baking sheet and roast them until they’re tender, about 20- 25 minutes. 
  • Gently push the peppers to one side of the baking sheet, then place the seasoned shrimp on that same baking sheet. Cook for 6 – 7 minutes.
  • Serve these easy shrimp fajitas on some tortillas with some fresh lime juice. If you can’t use corn tortillas due to dietary restrictions, consider using these almond flour tortillas

How to know when shrimp is cooked

Regardless of the type of shrimp you’re using, you need to ensure that they’re cooked properly. Raw shrimp is translucent. For shrimp to be properly cooked the flesh should be pearly white and opaque.
