  • 2 tbsp olive oil
  • ½ tsp salt
  • 2 bay leaves
  • 1 tbsp lime juice
  • ⅓ cup chopped Cilantro

How to make chipotle cauliflower rice

To start, measure out your ingredients and gather them all in one place.

 

Then, grate your cauliflower head using a cheese grater or a food processor. (I like using my cheese grater as it’s very easy to clean afterward.)

 

Next, add the olive oil to a skillet or non-stick pot over medium heat. Once the oil is heated, add in the cauliflower and bay leaves and cook for about 10 minutes covered.

 

This will help the cauliflower rice to absorb the flavors of the bay leaves and olive oil.

During this time, juice your lime and chop up the cilantro.

When the cauliflower rice is cooked or feels slightly tender, add in the chopped cilantro and the lime juice.

 

Mix well, then season to taste with salt and pepper and serve warm!

  • 1 tbsp lime juice (15.34 grams)
  • ⅓ cup chopped Cilantro (43 grams)
