Make your own easy homemade keto burrito bowl made with juicy chicken breasts, pico, guacamole, cilantro lime cauliflower rice and lettuce. This delicious, satisfying Mexican meal is so good you’ll be tempted to make it more than once this week!

When it comes to satisfying keto Mexican meals, burrito bowls, burritos, taco salads and tacos are among my favorite. They’re easy to make, are great for meal prepping and allow you to enjoy really flavorful keto meals that are homemade.

The best part is that there are so many ways to enjoy a burrito bowl so you never have to be bored. 

Ingredients for low carb burrito bowl

  • 152 grams of chopped romaine lettuce
  • 1 cup of cilantro lime cauliflower rice
  • ½ cup of pico de gallo
  • 1/2 cup of guacamole
  • 1/2 cup of fajita veggies
  • 1 cup of shredded cheese
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • ¼ black pepper

How to make keto burrito bowls

To start, gather all of the ingredients in one place. All the elements for the burrito bowl, except the chicken and lettuce should already be made and portioned out.

Once you’re done making these, complete these other steps. 

Cook the chicken

Make a seasoning mix with 1 tbsp garlic powder, 1 tbsp onion powder, ¼ tsp cayenne pepper, ½ tsp salt and ¼ black pepper and use it for seasoning the chicken breasts.

Next, pour, 2 tbsp of olive oil into a skillet and cook each chicken breast on medium high heat for 7 minutes on each side.

Remove from the heat and place aside with the rest of the prepared ingredients. 

Next, wash, rinse and chop the romaine lettuce.

 

Now that all the ingredients are prepared it’s time to assemble.

Assemble the low carb burrito bowl

Bring out two bowls and place 76 grams of lettuce in each. 

Then, add 1 cooked and chopped chicken breast to each bowl.

Next, add 1/4 cup of guacamole , 1/2 cup of cilantro cauliflower rice, 1/4 cups of fajita vegetables, 1/4 cups of pico and 1/2 cup of shredded cheese to each bowl, then serve with your favorite creamy dressing.
