While you cannot use pectin to thicken a low carb strawberry jam, you can use a keto friendly thickener like chia seeds or xanthan gum. Both of these ingredients are low in carbs and will not significantly increase the carbs in a keto sugar-free strawberry jam recipe. 

How do you make strawberry jam smooth?

If you enjoy a smooth jam, either puree the strawberries before making the jam or simply blend or process the jam for a minute or two once it has been cooked. 

Ingredients to make strawberry keto jam

  • 3 1/2 cups of chopped strawberries
  • 1/2 cup erythritol 
  • 1 tbsp lemon juice
  • A pinch of xanthan gum

How to make keto strawberry jam

To start, measure out your ingredients, then gather them all in one place. Also, place some warm water into the jar that you will use to store your jam once it has been made.

Next, wash your strawberries under cold water and chop.

Then, add in the lemon juice and the erythritol and mix well. Set aside to macerate for 1-2 hours. For best results, you can let this macerate in the fridge overnight. 

Once this is done, pour your berries in a pan and cook on medium high heat while stirring constantly.

By the 3 minute mark, the berries will come to a boil and start to foam up. Keep stirring for an additional 7 minutes.

Then add a pinch of xanthan gum and mash your strawberries with the back of your spoon.

Cook and stir regularly for another 10 minutes until the moisture reduces.

Turn off the heat, and place the strawberry jam in the warm jar.

Storing strawberry keto jam

Since this is a small batch, you can pour it into a mason jar that seals properly and store in the fridge for up to 10 days.
