This easy keto strawberry mousse recipe is going to become one of your favorites! Nothing screams “desserts” and “summer” more than strawberries, and this keto mousse recipe is the epitome of these two things with only 5 grams of net carbs!

If you like strawberries as much as we do, and want something light, fluffy, and still keto-friendly then this recipe is exactly what you’ll want to make. Like this keto strawberry cheesecake, this low carb strawberry dessert tastes amazing!

 

 

This strawberry keto mousse uses only fresh strawberries, cool whip, and a bit of gelatin powder. Of course, vanilla is used too, because it makes this recipe so much better.

This recipe is super easy to make, just like our berry cheesecake parfait recipe, and you just have to puree the strawberries and mix everything together. Plus, there is no sweetener used in this recipe as the strawberries are sweet on their own. However, if you enjoy your desserts sweeter, you can use a low carb sweetener of your choice. 

Can frozen strawberries be used to make this keto mousse?

If you do not have fresh strawberries, you can also use frozen strawberries. Before use, thaw the frozen berries and process with the recipe as usual. 

 

Tips to make the strawberry mousse:

  • Use cool whip for this recipe. If you do not have any cool whip, use a mix of equal amounts of cream cheese and heavy cream, with some gelatin powder to stabilize the mixture.
  • For this recipe, we used fresh strawberries, but you can also use frozen strawberries. Just make sure to thaw them before use or, if you do not want to thaw the strawberries, use a high power blender to blend frozen strawberries. 
  • If you want more flavor you can add sugar-free strawberry Jell-O to this recipe.

These are the ingredients you need to make this mousse: 

  • 1 ½ cup fresh strawberries
  • 1 8oz. tub cool whip
  • 1 teaspoon instant powder gelatin (or 1 teaspoon plain gelatin + 2 tablespoons water, set aside for 10 minutes, dissolve over medium-low heat, and add in a mixture)
  • 1 ½ teaspoon sugar-free vanilla extract

Gather all of your ingredients for the mousse.

Then chop up the strawberries.

Next, place the strawberries and vanilla extract into a blender and blend until smooth.

 

Place the cool whip in a bowl and add the strawberry puree, and instant gelatin. (If you’re using the regular gelatin, add in the next step).

 

Stir the ingredients with a spatula or a whisk to combine everything well.

Note: If using the regular gelatin, make sure it is cooled down and add it in a steady stream, while mixing the cool whip.

Spoon the mixture into a piping bag. This is an optional step.

Storing and freezing low carb strawberry mousse

You can store the strawberry mousse in a fridge for up to 24 hours in a jar. This recipe isn’t ideal for freezing as the mousse will collapse and become very runny once thawed. So avoid freezing the entire low carb mousse. However, you can freeze it in small drops like yogurt drops, and use it on top of ice cream if you’d like.

Can other fruits be used?

You can use many other fruits to make variations of this keto mousse. For instance, you can use blueberries to make a keto blueberry mousse or blackberries to make a blackberry mousse or raspberries to make a keto raspberry mousse. When it comes to different flavors you can experiment with just about any keto friendly fruit of your choice.

Many people wonder how to make strawberry mousse firm. Many times, when a mousse isn’t firm this is simply because the recipe does not incorporate ingredients like gelatin. This recipe here uses gelatin which makes this particular keto strawberry mousse firm. There is no need for extra firming.
