Recipe variations

You can make this recipe with coconut flour, but in this case, make sure you use only ¾ cup of coconut flour and add 1 tsp of xanthan gum. This will give elasticity and prevent the pancakes from breaking. Also, let the batter rest for 5 minutes before use. This way you will know if you need to add more liquid.
