The best part is that these pancakes are fluffy and they taste great. While many people don’t think that it is possible to make fluffy pancakes without almond flour, you actually can!

And while these pancakes are made with coconut flour, but still came out fluffy and tasted great with a slight hint of coconut.

And, if you don’t quite like the hint of coconut scent in these coconut flour pancakes, simply mask it with some extract or check out these other keto flour alternatives.

Ingredients for keto pancakes with no almond flour

  • 1/2 cup (or 8 tablespoons) of coconut flour
  • 2 tablespoon confectioners swerve
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking powder
  • 3 large eggs, room temperature
  • 1 tablespoon of vegetable oil
  • 1/4 teaspoon vanilla extract 

How to make keto pancakes without almond flour

To start, gather all of the ingredients in one place.

 

Next, crack the eggs into a bowl. Then add all the dry ingredients into a separate large bowl, and mix. 

 

Next, add the other wet ingredients into the bowl which contains the eggs and mix until well combined.

 

Pour the wet ingredients into the bowl containing the dry ingredients and mix until well combined. This mixture should form a thick coconut flour pancake batter. 

 

To make the pancakes, heat up a non stick skillet on medium heat. For each pancake, add 3 tablespoons of pancake batter to the non stick skillet, and cook for 1 minute on each side.

Continue this process until all the pancakes are cooked, then serve these flapjacks warm with your favorite keto pancake toppings.

I made four pancakes measuring 4 inches with this batter. However, you can make 6 smaller pancakes with the same batter by simply using 2 tablespoons of batter per pancake.

Important notes for these low carb pancake recipe without almond flour

These are not the lowest-carb pancakes out there. In fact, each pancake contains approximately 8.2 grams of net carbs.

When trying to perfect this pancake recipe,  I tested this recipe out multiple times. In the other versions of this pancake recipe, I used less coconut flour to make the pancakes, and, while these other pancakes had fewer carbs, they also tasted more like omelets than actual pancakes. 

It is quite normal for many coconut flour pancakes to taste more eggy than pancakey, so, if you don’t mind, go ahead and use only 1/4 cup of coconut flour and 2 eggs in this for some eggy pancakes. 

However, if you want pancakes that actually taste like pancakes, then follow the recipe above. 

This recipe, although higher in carbs actually tastes like flavorful pancakes very similar to traditional pancakes. They’re so good, you won’t even believe it’s made with keto friendly ingredients.

And if you want to stay within your carbs limits for the day, I suggest only eating 1 pancake.

Storing 

Store these in the fridge for up to 5 days in an air-tight container. Do not leave these pancakes in the fridge for longer as they contain eggs that are perishable.

Yes! To freeze, place any leftovers on a flat plate and freeze for a few hours. Once the pancakes are frozen, remove them from the plate and place them into an air-tight container and freeze them for up to a month.
