A keto egg loaf is a sweet loaf made with ingredients like eggs, cream cheese and butter. It is great for breakfast, lunch or dinner depending on the flavoring you use to make it.

This egg loaf which uses cinnamon and a low carb sweetener tastes very similar to french toast and you just have to try it out.

This simple loaf is rich, smooth and is made in such a way that it has only a very subtle egg taste which I’m sure you’ll appreciate. It’s a good idea to have this recipe on hand as you’re able to whip up so many quick meals with it. 

Best served for breakfast, but with some whipped cream or ice cream it can become a delicious keto dessert too!

For 1 large raw egg, there are 0.36 carbs according to food central data. This means they’re a great option for keto or low carb life styles.

Tips and tricks

  • Make sure the ingredients are at room temperature to ensure a smooth, uniform consistency of your batter once whisked or blended together. Otherwise, your batter can be lumpy especially if your cream cheese and butter are not room temperature. 
  • You can also blend all the ingredients together to make the process super easy.
  • If you forgot to take out the eggs from a fridge on time, submerge them in hot water for just a few moments to bring to room temperature.
  • If you cook this egg loaf following the instructions below, then you can expect it to be giggly when it is taken out of the oven, which may make you think that is is undercooked. However, it is actually cooked, you should simply let it sit and cool for 10 minutes and it will be perfect!
  • The loaf may deflate a little bit once it is out of the oven and cooled. This is completely normal. 
  • If you have followed the exact recipe below, expect a custard like texture similar to french toast when you cut into the egg loaf.
  • If you’d like it to be a little more bread like, you can also let it cook 10 more minutes. 
  • You can also do the toothpick test to make sure it’s cooked once taken out of the oven.

Tools used 

To make this recipe, you’ll need:

  • Mixing bowls 
  • Blender or whisk or electric mixer – You can blend, whisk or mix your egg loaf ingredients together. Use what you have on hand as long as all the ingredients are properly combined and distributed. 
  • 9 X 5 inch loaf pan
  • Parchment paper – When placing your parchment paper into your loaf pan you may experience some difficulty. There are two ways to get around this. Either use paper clips to keep the parchment paper in place, as I did below, or wet the parchment paper to make it more pliable and easily place it in your loaf pan. 

Ingredients

    • 0.75lb. cream cheese 
    • 6 large eggs
    • 2oz. butter, melted
    • 2 tbsp Erythrithol
    • 1 tbsp gelatin powder + 2tbsp cold water
    • 2 tbsp hot water
    • 1 tsp cinnamon

How to make keto egg loaf

To start, gather all of your ingredients in one place.

Next sprinkle the gelatin with water and place aside for 5 minutes. When the time is up add some hot water and stir to combine.

Also, at this point, preheat the oven to 375F and line a 9 x 5 inch loaf pan with baking paper.

In a bowl, beat cream cheese and eggs. Then add the butter and Erythritol.

 

Once this is done, stir in half the cinnamon and pour the mixture into the loaf pan.

 

Sprinkle the remaining cinnamon on top. This will give you a nice “bread alike” crust.

 

Bake the this keto loaf for 40 minutes then let it cool.

Recipe variations

Apart from the ingredients used in the recipe instructions above, you can also choose to use some coconut flour in your egg loaf recipe. This can act like a binder for the loaf. To use coconut flour in the egg loaf, you will need to get rid of the gelatin and 2 of the eggs. Then replace these with 1/4 cup of coconut flour. With this variation, your egg loaf will be slightly drier and more ‘bready’ as opposed to more custard-like. 

Also, if you have almond flour on hand, and you prefer it over coconut flour, you can use 1 cup of almond flour in this recipe for a keto egg loaf with almond flour. 

How to make keto egg loaf french toast

The egg loaf is already quite similar to french toast. However, you can make an even more genuine keto french toast with this egg loaf by slicing it up and frying it on a skillet for a finished product that tastes exactly like french toast. 

To make keto french toast, slice the egg loaf, melt your butter, and add the egg loaf slices to a non stick skillet. Cook on medium for 3o seconds to 1 minute on each side making sure to sprinkle with cinnamon or a good ground cinnamon substitute if you have none available. This will help add some crispness to your keto egg loaf french toast.

Butter and chocolate syrup: Spice up your recipe and top two slices of french toast with 1 tablespoon of butter and drizzle with chocolate syrup

Storing and reheating low carb egg loaf

It is best to store in an airtight container in the fridge for up to one week. This will give you ample time to eat this loaf, whether as a French toast breakfast for the week or otherwise. It is not recommended freeze egg loaf as the texture may become rubbery.

To reheat, simply remove from the fridge and fry in a nonstick skillet with a bit of butter.
