keto red velvet cake

This keto red velvet cake with keto cream cheese frosting is made with simple ingredients, but makes an amazingly delicious red velvet cake. Your friends and family will not believe that this cake is truly keto as it truly resembles the classic red velvet cake.

Unlike the classic red velvet cake, this one has really reduced carb content and does not contain sugar, so basically, you have a healthier version in this recipe.

The red velvet cake is a staple in American cuisine, and it was developed in the Victorian era. The cake has a long history and the color in the original red velvet cake comes from a simple mix of vinegar and cacao. The reaction of vinegar, cacao, and buttermilk tends to reveal the red color cacao has, but also makes the cake fluffy.

Today we have beautiful food colors that make cooking easier, and with this, we’ve made this easy keto red velvet cake with rich red flavor and taste!

Tips to make the best red velvet cake

  1. Vinegar – is it essential? Vinegar is not essential in making the red velvet cake, but if you want to add more fluffiness to your cake, add 1 tablespoon of apple cider vinegar to the batter.
  2. Powder or liquid color – this is completely optional, but if you are using liquid colors you may want to add ½ tablespoon of additional almond flour for every ounce of food color you are adding.
  3. You want your cake to be very moist. In order to achieve this result, if you’ve baked your cake think that it should be moister, and drizzle it with simple syrup. To make the simple syrup combine ½ cup water with ½ cup powdered Erythritol. Simmer for 5 minutes and drizzle over the cake. This will also make the frosting sit better on the cake.

Cream together butter and erythritol until smooth. Then add the eggs, coconut oil, and heavy cream. Make sure to blend well until everything is properly incorporated.

Pour the batter into a cake pan or two pans and bake for 30 minutes.

Now, let’s make the frosting.

To make your frosting beat the frosting ingredients until fluffy. My recipe calls for cream cheese, heavy cream, and powdered keto sugar, but you can use one of these simple cream cheese alternatives for frosting listed here.

Once done, place it aside or in the fridge until the cake is ready.

Remove the cake from the oven. If you baked a single cake, cool it and then cut it in half crosswise. If you baked two cakes, remove the cakes from the pan and cool.
