Then, mix all the ingredients together with a whisk until properly combined.

Once mixed together, pour the pancake mix into an air-tight container, seal, and place it in the fridge until you’re ready to use it.

How to use keto-friendly pancake mix 

This pancake mix is relatively easy to use. Simply scoop out a 1/3 cup of the mix into a bowl, then add in your favorite low-carb wet ingredients. I enjoy cream cheese, eggs, vegetable oil, and unsweetened almond milk. 

Therefore, I use this pancake mix in this way:

  1. Add 1/3 cup (or 4 tbsp) of pancake mix to a bowl.
  2. Crack in 1 small egg
  3. Add 18 ml olive oil
  4. Add in 10 grams of cream cheese, at room temperature
  5. Finally, add 40 ml of unsweetened almond milk.
  6. Mix everything with a whisk until well combined, then cook the pancakes.

Makes 2 keto pancakes – each about 4 inches in diameter. 

How many carbs are in keto pancake mix?

Typically, most low carb pancake mixes have under 10 grams of carbs per serving. For example, carbquik pancake mix has 2 net carbs per serving and Birch benders keto pancake mix has 5 net carbs per serving. This homemade keto pancake mix has 6.8 net carbs per serving.

How to store gluten free pancake mix

This gluten free pancake mix will last as long as the ingredients it is made with last. So, since coconut flour and almond flour can last in the fridge for up to 3-6 months, you can expect this keto friendly pancake mix to last between 3-6 months as well.

To keep this pancake mix fresh, place it in an air-tight container, or Ziploc bag, then place it in the fridge for 3-6 months.
