Do this by placing the zucchini on a chopping board or plate and lightly sprinkle with salt. Let this sit for about 10 – 15 minutes. Beads of moisture will form on the spiralized or sliced zucchini.
- Once the time is up, dab out the excess liquid with a paper towel.

- 1 cup zucchini noodles, you can spiralize or grate
- ½ cup tomato sauce, sugar-free or 1/2 cup sugar free marinara sauce
- 1 cup cooked sausage or cooked ground beef.
- ½ cup ricotta cheese or ricotta cheese substitutes
- ½ tsp garlic powder
- ½ tsp Italian herb seasoning
- ¼ cup mozzarella cheese, shredded or torn into pieces
How to make keto lasagna in a bowl
To start, gather all the ingredients in one place.
Then in a bowl, combine the ricotta cheese with garlic powder and Italian herb seasoning.
Place 1/3 of the sausage in a bowl. Top with 1/3 of the tomato sauce
Next top with 1/3 of zucchini noodles.
Then 1/3 of the cheese mixture.
Repeat this process twice more.
Finish with mozzarella as the last layer, then microwave the keto lasagna bowl for 2 minutes or bake for 10 minutes at 350F.
Serve this easy single-serve keto lasagna warm.

Recipe substitutes
I used cooked sausage, but you can go with ground beef or pork, or any protein source that you want. This recipe can also be great with cooked ground turkey.
