Ingredients for low carb granola clusters

These are all the ingredients you will need in order to make this carb free granola recipe:

  • 1 cup raw almonds
  • 1 cup raw cashew nuts
  • 1 cup raw pumpkin seeds
  • 3 tbsp softened coconut oil
  • 3 tbsp cocoa powder
  • 3 tbsp sugar-free syrup, like Lakanto
  • ½ tsp vanilla extract
  • 1 pinch salt

How to make keto granola clusters

To make, gather all your ingredients in one place, then preheat the oven to 300F. Also, line a baking sheet with parchment paper.

Place the nuts and pumpkin seeds in a bowl of a food processor. Process until broken into little pieces. Do not over-process or you will end up with a powder.

 

Once processed, it should look somewhat like this:

 

In a separate bowl, combine softened coconut oil, syrup, and vanilla and stir until well combined.

 

Then fold in the processed nuts and cacao and add salt.

Stir to combine

Then spread it over a baking sheet.

Bake these for 25 minutes

Once baked, cool the keto granola before breaking it into pieces to form keto granola clusters.
