These homemade keto cheesy chicken fritters are super easy to make, and a great way to turn chicken breasts into something amazing. They are crispy on the outside and juicy and flavorful on the inside.

All the main ingredients used to make these easy cheesy fritters, including the chicken breasts, eggs, cheese and almond meal are low in carbs. Therefore, the fritters are very low in carbs. In every serving size there are 1.1 grams of net carbs.

  • 1.5 lbs chicken breasts, chopped small
  • 2 eggs
  • 1/3 cup almond meal
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs
  • 1 tsp dried chives
  • Salt and pepper, to taste
  • Olive oil, for frying

How to make keto cheesy chicken fritters

To start, first gather all of your ingredients in one place.

Then in a bowl, combine eggs, herbs, and almond meal.

Add cheese and chicken, then season to taste with salt and pepper and stir until combined.

Next, heat the olive oil in a skillet. Then add the mixture by tablespoon into the heated oil.

Press gently and cook the fritters for 6-8 minutes. Then serve the keto fritters warm.

How to store chicken fritters

The fritters will last for 3 days in a fridge. If you want to freeze these, stack them with a piece of parchment paper between each fritter. Place the fritters in an airtight container and freeze up to a month. To serve, reheat in the oven at 350F for few minutes.

What to serve with these chicken fritters

These will pair great; with guacamole, aioli, plain mayonnaise in terms of keto friendly condiments.

They can be also served with fresh salad, mashed cauliflower, or roasted broccoli.

Recipe variation for keto fritters

The recipe can be slightly altered if you add different spices. The chicken pairs great with any herb including dill.

You can add in some sliced spring onions, or a tablespoon of parmesan for some extra cheese flavor.

You can also make some spicy chicken fritters by adding in some chili powder or  Keto-friendly hot sauce, like Franks hot sauce or few drops of Tabasco sauce to the recipe.
