  • 2 eggs
  • 1/3 cup almond meal
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs

  • Olive oil, for frying

To start, first gather all of your ingredients in one place.

Then in a bowl, combine eggs, herbs, and almond meal or a sub for almond meal.

Add cheese and chicken, then season to taste with salt and pepper and stir until combined.

Next, heat the olive oil in a skillet. Then add the mixture by tablespoon into the heated oil.

The keto chicken cheese fritters will last for 3 days in a fridge. If you want to freeze these, stack them with a piece of parchment paper between each fritter. Place the fritters in an airtight container and freeze them for up to a month. To serve, reheat in the oven at 350F for a few minutes.

These will pair great; with guacamole, aioli, plain mayonnaise in terms of keto friendly condiments.
