Keto Chicken Stuffed Peppers

EASY to make keto chicken stuffed peppers made with just a few easy to find ingredients. These stuffed peppers have only 3 net carbs per serving and are made in 30 minutes!

These peppers are a fun twist on the classic recipe. They are stuffed with chicken and topped with shredded cheese, enriched with the smoky flavors from the grilled peppers.

You can make these in no time and in different ways. Just use different sauces and you will have a new dish all the time that is always interesting and delicious.

  • For this recipe use the red bell peppers. They have a mild sweet taste which pairs perfectly with the chicken.
  • Regarding the taste, you can combine chicken with hot sauce, BBQ sauce, tomato sauce, or even heavy cream for added flavor.

Ingredients

These are the ingredients you will need to make these grilled chicken stuffed peppers:

  • 2 red bell peppers
  • 0.5lb. chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • ¼ cup BBQ sauce, heavy cream, hot sauce, or tomato sauce, optional

 

How to make keto chicken stuffed peppers without rice

To make these first gather all of your ingredients in one place.

 

Then cut the bell peppers in half by length and place aside.

 

Next, heat the olive oil in a skillet, and add the chicken. Then cook until the chicken is no longer pink.

 

Season the chicken with salt, pepper, and add onion powder and garlic and cook for 1 minute.

 

At this point, if using, you can add BBQ sauce, hot sauce, heavy cream, or tomato sauce and simmer for 5 minutes.

Once you chicken has been cooked, stuff the peppers with the chicken mix.

 

Preheat your grill to 375F, place the peppers on a griddle, over indirect heat and cook for 30 minutes, covered with a lid.

Lastly, top with cheese and cook until the cheese is melted and serve the chicken stuffed peppers warm.

 

How to store

To store the bell peppers stuffed with chicken, place them in a fridge up to 2 days in an air tight container. You can also freeze in a ziplock bag for  up to 1 month. Once you’re ready to use, thaw in microwave. Do not reheat twice.

Can these stuffed peppers be meal prepped?

You can cook the chicken ahead and keep it stored in the refrigerator. Once you’re ready to have these, simply reheat the chicken, slice your peppers and stuff, grill and serve.
