This easy keto recipe only needs 8 ingredients for the tastiest low carb stuffed peppers you’ve ever tasted. You should note that we used large sweet red grilling peppers in this recipe as this is what we had on hand, as opposed to bell peppers. However, you can choose to use other sweet pepper options like green, yellow, red, or orange bell peppers or even poblano peppers if it suits you.
To make this recipe you will need:
- 3 Large red sweet peppers
- 1 lb Jimmy Dean original ground sausage
- 4 oz. Cream cheese
- ½ c Chopped green onion
- ½ tsp Garlic powder
- 2 tsp Minced garlic
- Salt and pepper to taste
- 1 c Shredded mozzarella cheese

For this recipe, we used ground sausage. However, you can choose to use whatever meat you’d like for stuffing.

How to make keto sausage stuffed peppers without rice
To start, slice each of the large sweet peppers in half lengthwise, and scoop out all of the seeds and the stem from the inside.
Then, in a large skillet over medium-high heat, brown the ground sausage until it is cooked through.
In the last 30 seconds of cook time for the sausage, add in the garlic powder

Then your minced garlic, as well as salt and pepper to taste.
