This salad dressing is tangy, sharp, fresh, and flavorful, and it works well to liven up every salad I’ve tried it on! As such, this salad dressing has become a go-to in my family.

Most salad dressing recipes contain vinegar, but if you’re out, don’t like it, or no longer use it, I’ll show you how to make the best salad dressing without vinegar by using lime or lemon juice instead.

The best part about this recipe is that all the ingredients are super easy to find or already in your kitchen.

But this salad dressing is also versatile. I’ve tried it with the ingredients listed below, but I’ve also gone ahead and tweaked it multiple times by switching up the type of mustard I use, playing around with different herbs, and even adding a few other types of spices. 

Every time I’ve made this salad dressing, it has come out tasting incredible. So if you don’t like the same old thing all the time, you can also make some tweaks of your own.

The other great thing about this salad dressing is that it can last in the fridge for up to a week. You can easily make a large batch for the whole family.

This is one of the ways I made it easier for my family to enjoy tasty salads throughout the week. It’s so easy to toss a quick, healthy salad together when you don’t have to make the salad dressing yourself!

Ingredients 

3 tablespoons olive oil—Use a good grade of extra virgin olive oil for this recipe. However, if you don’t have it, you can also go with oils like avocado, sunflower oil, or corn oil.

1 teaspoon of Dijon mustard—I used Dijon, but I’ve used spicy yellow mustard, regular yellow mustard, and even whole-grain mustard here before. 

2 whole cloves of garlic, minced—I prefer fresh garlic for my salad dressing, but you can also substitute with 1 teaspoon of garlic powder if you don’t want to mince garlic cloves. 

1 tablespoon of lemon or lime juice — Freshly squeezed lime or lemon juice is a must-have for this salad dressing. The citrus juice helps add a bit of acidity to the dressing, but it also helps to improve the flavor of the dressing and add brightness to your salad. I do not recommend using store-bought lemon juice. It is quite bland compared to fresh.

¼ teaspoon lemon pepper seasoning—I add lemon pepper seasoning to add some back pepper and an extra bit of lemony brightness to the dressing. 

½ teaspoon sugar—helps to round off the dressing. You can also use some equal parts honey here.

¼ teaspoon salt—helps to round off the dressing too.

1 teaspoon fresh (or ⅓ teaspoon dried) herbs, such as chives, basil, dill, or parsley. I love adding fresh herbs to my salad dressing, but this ingredient is optional.
