Whoever said that going keto meant giving up on your favorite foods, particularly pizza, hadn’t heard of this keto pizza dough recipe, more commonly known as the Fathead dough. This super adaptable, low-carb, grain-free pizza crust is a game-changer for you if you love pizza and have embarked on a keto or low carb lifestyle.

This is sure to become your go-to keto friendly pizza dough recipe!
What Is Fathead Dough?
Fathead dough is an alternative to the traditional wheat-based doughs that are heavy in carbs and gluten. Its name was derived from “Fat Head,” a popular documentary by Tom Naughton that challenged the mainstream beliefs about diet, fats, and cholesterol. This dough is made of four basic ingredients: mozzarella cheese, cream cheese, eggs, and almond flour. Fathead dough is highly used in keto pizza recipes, however, you can also use it to create rolls, crackers, and even sweet pastries!
Ingredients for Keto Pizza Dough
You will need just four basic components:
1. Mozzarella Cheese: The primary ingredient in this keto pizza dough is mozzarella cheese. It provides the required structure and elasticity for the dough while contributing to its high-fat content which is great for keto lifestyles.
2. Cream Cheese: Cream cheese adds a rich, creamy texture to the dough and acts as a binder, helping all the ingredients combine smoothly.
3. Eggs: Eggs are essential in providing moisture to the dough, helping to bind the ingredients, and giving the finished product a golden hue.
4. Almond Flour: This low-carb, high-fiber flour substitute is what gives the dough its texture. It makes the dough sturdy yet tender, ensuring the dough mimics the consistency of traditional pizza dough closely.
I always use this finely ground almond flour for keto baking — it gives my dough the perfect texture every time.
These are the core ingredients you will need to create your homemade keto pizza dough. However, you can always choose to add in extra flavors like herbs and spices to customize it to your taste. Just ensure that any additions are keto-friendly to keep the carb count low.
What I Used to Make This Keto Pizza Dough:
✔️ Blue Diamond Almond Flour – finely sifted and perfect for low-carb baking
✔️ Microwave-safe bowl – ideal for melting cheese without mess
✔️ Non-stick silicone mat – makes rolling out the dough super easy
✔️ Pre-cut parchment paper sheets – no tearing or sticking!
How to Make Fathead Keto Pizza Dough
To begin making your fathead keto pizza dough, gather all your ingredients in one place. You will need 1 ½ Cup shredded mozzarella cheese, 2 oz. cream cheese, 1 Cup almond flour and 1 egg.
Preheat your oven to 350 degrees Fahrenheit (176 degrees Celsius).
Start the dough-making process by melting the mozzarella and cream cheese together. Melt the mozzarella and cream cheese in a microwave-safe glass bowl in 30-second intervals until they form a uniform mixture. Stir between each interval to ensure even melting.
Next, beat the egg in a separate bowl. Add the beaten eggs to the cheese mixture, ensuring it’s not too hot, so it does not cook the eggs.
Next, slowly incorporate the almond flour into your dough mixture. Ensure the mixture is well combined and forms a homogeneous dough.
The dough will be quite sticky, but don’t worry. Wetting your hands slightly can help manage the stickiness as you knead and roll out your dough.
Place the dough into the freezer to set for 15 minutes.
After 15 minutes, roll out the dough to your desired thickness on a non-stick silicone baking mat or pre cut parchment paper — it makes cleanup so easy!
You can wet your hands slightly with water to keep the dough from sticking to them as much.

Once your dough is rolled out, use a fork to poke holes across the surface. This will prevent it from bubbling up excessively while baking.
Place the dough, still on the parchment paper, onto a baking sheet or a non stick pizza pan.
A good non-stick pizza pan makes all the difference for a crisp keto crust.
And bake it in the preheated oven for about 10-12 minutes, or until it’s lightly golden.
That’s it! You’ve just made your own fathead keto pizza dough. All that’s left to do is add your favorite low-carb toppings and return it to the oven until the cheese is melty and slightly browned. And voila, you’ve got a delicious, keto-friendly pizza!

Storing the Pizza Dough
Need to make a few of these to keep on hand for longer term storage? I’ve got you.
Since this pizza dough is precooked, you can easily store it for up to three months.
After the initial 15 minute baking process, cool the pizza doughs and securely wrap in plastic wrap, then in foil, or place in a freezer-safe bag. It’s important to label the pizza dough with the date. Make sure to lay them flat to prevent them from breaking.
This process allows you to have a few ready-to-use keto pizza bases whenever you want.
When you’re ready to assemble and enjoy your pizza, all you need to do is pull the dough from the freezer, add your choice of keto-friendly toppings, then pop in the oven at 400–425°F for 10–15 minutes. There is no need to thaw the pizza dough before hand.
