These delicious and healthy meal prep bowls are perfect to make when you are planning ahead on the keto diet. You can either prepare these for your lunch or dinner, or as a nutritious lunch box. The benefit of these meal prep lunches is that you can assemble them in the exact way you want, with your desired protein, greens and healthy fats. Plus, they’re a great way to ensure that you always have food on hand, whether that is to take to work, or to have on hand while you’re at home.
These meal prep bowls will stay fresh in your fridge for up to 5 days as long as you use quality containers for storage. You can choose from the plastic ones or glass ones, but just make sure that they are air-tight.
Besides that, if you’re on any kind of weight loss or healthy eating journey, meal prepping is going to become your best friend. Use these tasty keto bowls to help you eat a controlled amount of the food throughout the week to help you with your goals.
Tips on how to make meal prep chicken bowls
Here are some useful tips you can use to make this recipe better:
- You can combine veggies and chicken in a bowl, but make sure to add avocado just before serving. If you add it during the prep time, it will become dark and soggy when it comes time to eat. Especially if you make this keto meal prep recipe for up to 5 days.
- You can cook the chicken with some other type of sauce if you choose. You can also go for a sauce-free chicken and instead cook the chicken in chicken stock, chicken broth, or a chicken broth alternative. That way, your chicken still remains juicy and tender.
Ingredients To Make Keto Meal Prep Chicken Bowls
These are all the ingredients you will need to make this meal prep recipe:
- 1 medium skinless and boneless chicken breast
- 3 tablespoons hot sauce, like Frank’s Red Hot Sauce
- 1 tablespoon butter, divided
- 1 tablespoon mayonnaise
- Salt and pepper, to taste
- riced cauliflower
- 1 pinch turmeric
- 6 leaves crystal or Iceberg lettuce
- 1 small cucumber
- 1 avocado, peeled, chopped
How to make keto meal prep chicken bowls
Gather all your ingredients in one place. Making sure to shred your lettuce and chop up your cucumbers first.
To make this recipe, start by cooking your chicken.
This recipe uses an instant pot. So, to start, place half the butter and hot sauce into your instant pot.
Next, add your chicken breasts. Make sure you do not add water.
Then close the instant pot, secure the lid and select Manual, and High Pressure. Set the time to 20 minutes.
Quick release the pressure and open the lid after the cooking cycle is done.
Shred the chicken with two forks and place back into the instant pot. Add mayonnaise and stir to coat the chicken with the mayo and cooking sauce.
Cook on saute mode for 1 minute.
Place the chicken aside to cool until you’re ready to plate the meal.
Next rice the cauliflower. You can do this using a food processor. Simply place your cauliflower into the food processor and process them until a fine grain is obtained.
After this is done, melt the remaining butter in a skillet. Then add the turmeric and the riced cauliflower into the melted butter. Cook the riced stirring for 4-5 minutes over medium-high heat or until it becomes tender.
Now, it is time to assemble your bowls. First place the cooked cauliflower rice (at room temperature) into a meal prep container.
Then add in your shredded lettuce and top this with cucumbers, and instant pot chicken.
Serve with some chopped avocado on top and this yummy keto coconut milk salad dressing. Enjoy these easy keto meal prep bowls!
Note: If you want to make more of this recipe, simply double all of the ingredients. By doing so you can make up to 4 meal prep bowls out of this recipe.
