Classic chocolate chip cookies contain an average of about 12 grams of carbs in every cookie. This is a lot of carbs for just one small cookie and therefore those types of cookies are not to be eaten on a keto diet. On the other hand, low carb chocolate chip cookies contain fewer carbs at only 4g net carbs per cookie. This is the perfect keto treat to have when you have any kind of sweet craving.

 

What kind of chocolate chips can be used in this keto cookie recipe?

There are quite a few low-carb chocolate chip options that you can use to make your very own delicious cookies. For this recipe in particular, lily’s dark chocolate chips were used. They’re quite popular for people doing keto and you can find them on Amazon for a fairly reasonable price.

You can also find them in most grocery stores in your local area.

 

Tips to help you make the low carb keto cookies with xanthan gum

  • These cookies are made entirely with coconut flour. Although many believe it is not possible and that the cookies will fall apart or be too dry, one special tip to avoid this is finding a super fine coconut flour to use. Superfine coconut flour will work wonders. I recommend Terrasoul Superfoods fine textured organic coconut flour. You can grab some at Amazon if you’re in a hurry.
  • Use xanthan gum. You already know that keto flour does not contain gluten. Gluten makes regular flour and the dough made from this type of flour stretchy and pliable. The xanthan gum in this recipe will make this possible so do not skip it. If you have no currently, I recommend you grab some xanthan gum from amazon.
  • These cookies are perfect with vanilla extract but for a twist use bourbon vanilla. It is a crowd-pleaser for sure.

 

Ingredients to make low carb chocolate chip cookies

The ingredients you need to make these tasty low carb cookies are very easy to find. You will need:

  • 4oz. salted butter, room temperature
  • ¾ cup granulated Erythritol
  • 1 teaspoon sugar-free vanilla extract (optional)
  • 1 large egg
  • 1 ½ cups superfine coconut flour
  • ½ teaspoon baking powder
  • ½ teaspoon xanthan gum
  • 3oz. sugar-free chocolate chips

 

How to make keto chocolate chip cookies with xanthan gum

To make this recipe, first, you will need to assemble all of the ingredients in one place.

Then will preheat your oven to 350F.

Also, at this point, you should line your baking sheet with parchment paper.

Now it’s time to start cooking.

In a mixing bowl, cream the butter and Erythritol.

 

Next, add in the egg and vanilla extract and beat for 15 seconds, no more no less. Less will not mix up well, and more, well it will just become watery.

     

    

Then fold in the coconut flour, baking powder, and xanthan gum.

You can stir this mixture using a silicone spatula until the dough comes together.

Next fold in the keto-friendly chocolate chips. Stir until everything is mixed in well, then let the dough rest for 5 minutes.

 

The next step is to shape the dough into 12 balls, then arrange the dough balls on a baking sheet. Press gently to flatten, ½-inch thick.

Lastly, you will bake the cookies for 10 minutes until they look like this:

Cool the cookies on a wire rack for 10 minutes or until they’ve firmed up.

Note: When they’re first removed from the oven, they will be soft, but as they cool down, they will get the right texture.

 

Substitutes

You can make a few substitutes for this recipe without changing it too much. Here are some things you can swap:

  • Swap the coconut flour with almond flour
  • Swap erythritol for swerve

How to store

For the first 2-3 days, you can store these in an airtight container at room temperature. Once the first 3 days have passed, you can store these xanthan gum cookies for up to a week in a fridge in an airtight container.
