This keto chicken stroganoff is a creamy keto recipe made with pieces of meat that are cooked in a sour cream. This stroganoff recipe is great for a quick family lunch or dinner with only 4.3 grams of net carbs per serving.

For this dish boneless chicken thighs were used. You can chop these to mimic the original recipe, or leave them in one piece. I prefer the chopped chicken thighs as they are easier to eat and blend nicely with all the ingredients. 

Ingredients for chicken stroganoff

  • 1 lb. boneless and skinless chicken thighs, cut to bite size pieces
  • 2 tbsp olive oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup sliced mushrooms
  • 1 cup half-and-half cream
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • Cauliflower rice or a keto friendly rice substitute, to serve with it
  • Salt, and pepper, to taste

How to make keto chicken stroganoff 

To start, first, gather all of your ingredients in one place.

Next heat the olive oil in a skillet and cook the chicken until cooked through. 

 

Remove the chicken and place it aside. In the same skillet add mushrooms, with garlic and onion powder.

 

Cook until the mushrooms are soft. Also place the cooked chicken back into the skillet together with the half-and-half cream and mustard.

 

Cook for 5 minutes.

Pour in lemon juice and remove from the heat.

 

Serve warm over riced cauliflower and sprinkled with dill or a dill alternative like chives.

How to store & freeze low carb chicken stroganoff

Store this low carb stroganoff in a fridge for 3 days. If you want to freeze it, store it in a freezer-friendly container and freeze up to a month. 

To thaw and serve; thaw overnight in a fridge. Reheat in a microwave for 3 minutes on high. 

 

What other cuts of chicken can be used?

You can use any piece of chicken that is boneless and skinless. Thighs, legs, and breasts will work well in this recipe.

 

Tips and tricks that can help while cooking this meal

I find that seasoning chicken before cooking and leaving it in a fridge for 10 minutes prior to cooking is a great way to tenderize the chicken. I also, love using dried spices like onion and garlic powder, as they really give flavor, but you do not have to deal with chopping and dicing. These spices are my special trick when I am busy and just do not feel like chopping onions.

Serve this low carb chicken stroganoff with riced cauliflower, brussels sprouts, or with zoodles.
