Tips to make the best low carb croissants

  • Before adding the cheese to the dry ingredients, make sure it is completely melted. 
  • Also, when you add egg, start stirring immediately. The cheese may still be hot and this will cook the egg. You can also beat the egg before adding. 
  • It is important to refrigerate the dough before use. The cold from a fridge will make it less sticky and easier to handle.

Ingredients to make keto low carb croissants

These are all the ingredients you’ll need to make these croissants

  • 1 ½ cups mozzarella cheese, grated
  • 2oz. cream cheese, cubed
  • ¾ cup almond flour
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt, to taste
  • 1 egg
  • ½ tsp baking powder, optional but raises the dough

How to make keto croissants

To start, gather all the ingredients in one place.

Next in a mixing bowl, combine almond flour, onion powder, garlic powder, Italian seasoning, and salt.

In a microwave-safe bowl, combine cream cheese and mozzarella and microwave the cheese for 30 seconds. Repeat once again until the cheese is melted.

Add the cheese mixture to the dry ingredients.

Add egg and stir until the dough comes together, then refrigerate the dough for 30 minutes.

Preheat the oven to 350F and roll the dough to a ¼-inch thick rectangle. It is best to roll the gluten-free croissant dough between two pieces of baking paper.

Cut the dough into squares, then cut each square into a rectangle.

Roll the croissants, starting from the longer side towards the narrower side.

Arrange the croissants on a baking sheet. Bake the croissants for 15 minutes.

Once baked serve these keto croissants warm.

How to store, freeze and reheat

You can store these at room temperature. To keep them fresh, wrap each in a piece of aluminum foil and place in an airtight container. 

Also, if you want to freeze the croissants, wrap each in aluminum foil, place them in an air-tight container and freeze for up to a month.

To thaw and reheat, leave them overnight in a fridge and unwrap from the foil, then reheat in the oven for 3 minutes at 350F. 

Tools Used

The basic tool used to make the croissants are a rolling pin. You will also need ou can a silicone mat and a cutting tool such as a knife or a pizza cutter as well as a microwave safe bowl. I advise that you sprinkle the knife or pizza cutter with some baking powder to prevent sticking.
