keto death by chocolate cake

This is the ultimate chocolate cake and one of the best you can make. It has rich frosting captured between layers of cocoa coffee-rich sponges.

If you have a sweet tooth but you’re following a keto diet, making a dessert that is extremely decadent yet low in carbs can sometimes be quite hard, but not at all impossible.

After all, most of the desserts do not have the well-known flavor that you have come to expect from classic desserts. This rich death by chocolate keto cake does!

This cake is made with almond flour, cocoa powder, and some instant coffee granules. There is a magical bond between chocolate/cocoa and coffee as the coffee gives an extra luxurious taste to the cocoa.

The cream cheese frosting is very simple but gives a nice refreshing and not-so-heavy finish to the cake. The cream cheese gives an almost cheesecake feel to the entire experience.

Tips to make keto death by chocolate cake

  1. Can you use only coconut flour to make this cake? – for this cake, we do not recommend coconut flour as the cakes may break apart and be too dry.
  2. Can you bake all three of the cakes at once? –  Do not think about it! Baking all three cakes all at once is not recommended. You must bake it in three batches and if you try at once, you may likely end up either with burnt cake or with a cake that has a raw center.
  3. In order to speed up the process of making this yummy keto cake, you can mix the chocolate cake batter in a food processor to speed up the entire process.
  4. Can I substitute almond milk? Yes, you can use coconut milk, or for more luscious cakes, use heavy cream
  5. In terms of freezing the cake. You cannot freeze the entire cake once the frosting is on, but you can freeze the cake after baking. Reheat in the oven for 10 minutes at 350F.

ingredients for keto chocolate cake

Then in a mixing bowl, combine almond flour, cocoa, baking powder, instant coffee, and Erythritol.

In a separate bowl, beat butter with eggs and vanilla and fold in the almond milk.

Next, fold the wet ingredients into the dry ones and stir until you have a smooth batter.

It should look somewhat like this:

Line three 6-inch spring forms with parchment paper. For easy removal make sure to butter the sides of the springform.

Divide the batter evenly among the spring forms and tap gently at the kitchen counter.

Bake each cake layer for 25 minutes then cool the cake layers completely at the kitchen counter.

To make the keto chocolate cream cheese frosting, add all the frosting ingredients to a bowl. I use cream cheese to make this frosting recipe, but if you’re out, you can make cream cheese frosting without cream cheese by using one of the alternatives listed here.

Then beat until smooth.

Once the cake layers have been cooled and the frosting has been made, cover the first layer with ¼ of the keto chocolate frosting. Repeat layers and cover the cake completely with the frosting.

Decorate this keto chocolate coffee cake with chocolate chips and refrigerate for 1 hour.
