- 1lb. beef stew meat or beef chuck meat
- 1 small carrot, cut into half moons
- 1 parsnip, cut into small pieces
- ½ green bell pepper, seeded, chopped
- 1 teaspoon onion powder
- 8 cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 ½ cups beef broth
- 1 teaspoon dried thyme
- Salt and pepper, to taste
How to make keto beef stew
To start gather all of your ingredients in one place. Chop up your carrots, bell peppers and your beef.
Next select Saute on your Instant Pot and add in your cooking fat.
After 2 minutes, add in the beef and cook until browned, for 5-6 minutes.
Next, toss in carrots, parsnip, and bell pepper and cook with the beef for 5 minutes more minutes.
Once the 5 minutes are up, add garlic and onion powder to the pot and cook 1 minute or until fragrant.
Pour in the beef broth and add chopped cherry tomatoes and season to taste. Also, at this point, and add your thyme.
Lock the lid into place. Select Manual and set the Instant pot to High pressure.
Adjust the timer to 35 minutes.
After the cycle is completed, perform a natural pressure release, for 10 minutes, followed by a quick pressure release.
