Jambalaya without rice

When it comes to jambalaya recipes, almost all of them are made with rice. However, if you’re out of rice, don’t like it, or don’t want to use it, there is a simple way to enjoy a jambalaya recipe without rice.

You simply have to replace the rice, with riced cauliflower or Miracle rice!

The cauliflower does change the texture of the meal a bit, but the flavors in this one-pot dish are so good, you won’t care that there’s no rice in there! Trust me.

Tips for making this recipe

Cauulfiwer rice can get really soggy when added to a dish like jambalaya. This is why it is very important that you roast the riced cauliflower in the oven for about 10 minutes before adding it to the pot. I’ll show you exactly how to roast the cauliflower rice below.

Besides cauliflower rice, you can also use a rice substitute like Miracle rice in your jambalaya if you want something store-bought.

Ingredients for jambalaya without rice

  • ½ pound of chicken breasts
  • 2 tablespoons of olive oil, divided
  • 1 tablespoon of Cajun seasoning
  • ½ large onion, diced
  • 12oz. riced cauliflower
  • 1 stalk celery, chopped
  • ½ cup chopped peppers, mixed
  • 1 teaspoon of garlic powder
  • ½ tablespoon of smoked paprika
  • 1 cup Andouille sausage, sliced
  • 12oz. can of chopped tomatoes
  • 6oz. peeled and deveined shrimp
  • Salt and pepper, to taste

How to make jambalaya without rice

Preheat the oven to 350F. Place the chicken in a baking dish, brush the chicken with olive oil, and sprinkle one teaspoon of Cajun seasoning over the chicken. Bake the seasoned chicken for 25 minutes.

In a small baking dish, toss the cauliflower with ¼ teaspoon Cajun seasoning and 1 teaspoon of olive oil. Bake the cauliflower for 10 minutes, alongside the chicken.

Heat the remaining olive oil in a skillet. Add the chopped onions and bell pepper and cook for 5 minutes. Make sure you stir to prevent burning at the bottom of the skillet.

Next, add the sausage and the remaining spices and cook for 5 more minutes.

Then you’ll toss in the shrimp and cook those for only 2 minutes.

 

At this point, cut the baked chicken into pieces. Then add the chopped tomatoes and add chicken to the skillet and simmer for 5 minutes.

Turn off the stove, then stir in the riced cauliflower and serve this jambalaya recipe without rice warm.

Note: My jambalaya is more on the saucy side since it has no rice and rice usually tends to absorb liquid well.  If you prefer your jambalaya to be drier, simply let it simmer for more than 5 – 10 more minutes before adding the cauliflower rice.

Storing  jambalaya without no rice

To store, place any leftover/remaining jambalaya into an airtight container and store for 2 minutes. 

You can also freeze any leftovers. Place leftovers in an airtight container and freeze for up to a month.
