The ingredients for this sauce are all kitchen staples that you likely already have like:
Butter
You can use either salted or unsalted butter (but don’t make your sauce salty) and any brand is fine here. The butter is needed to create this rich base for the sauce that helps the other seasonings coat the eggs.
Fresh Garlic

Chicken Broth
A little chicken broth helps to loosen the butter and also prevents the sauce from feeling overly oily. I also sometimes substitute with vegetable broth or seafood stock when I have it.
Cajun Seasoning

Old Bay Seasoning (optional)
Old Bay reinforces the seafood-boil flavor and complements the cajun seasoning.
Smoked Paprika
Smoked paprika adds some color, as wll as some warmth, and a subtle smoky flavor to the sauce, but you can also use regular paprika as a substitute if that’s what you have on hand.
Onion Powder and Garlic Powder
These will help deepen the savory flavors even when fresh onion and garlic are already used in the sauce.
Brown Sugar (optional)
You can add a small amount of brown sugar to help balance the salt, spice, garlic, and lemon in this sauce. Just a little goes a long way. You don’t want this sauce to taste sweet like a dessert.
Lemon Juice
Some lemon juice (freshly squeezed if possible) brightens up this heavy butter sauce.
Hot Sauce or Red Pepper Flakes
These are optional if you want some more heat. Also, use either one to control the heat exactly to your liking. If you don’t like heat or prefer your sauce mild, then you can leave these out.
How to Make Egg Boil Sauce

Melt the butter over medium-low heat. Then add the finely chopped onion and cook until softened.
Next, cook the garlic for approximately 30 seconds or just until fragrant.
Then bloom the seasonings. Do so by adding the Cajun seasoning, Old Bay, paprika, onion powder, garlic powder, and red pepper flakes and let them cook briefly in the butter. This will help to deepen those flavors.
Once that is done, add all the liquid ingredients to the pot in this order. Stir in:
- Chicken broth
- Lemon juice
- Hot sauce
And whisk until everything is well combined.
Lastly, simmer the sauce gently, then add the brown sugar (if using) until it is slightly reduced and glossy, about five or six minutes.
Finally, add peeled boil eggs and gently turn them until they’re fully coated.

This sauce should be loose enough to enough to spoon over the eggs but thick enough to cling to them. My recipe here usually makes the perfect egg boil sauce texture, but if you find any issues with the thickness for whatever reason, here are some things you can look into doing:
- Simmer it uncovered for a few extra minutes
- Use slightly less broth
- Add another tablespoon of butter
- Stir in a small cornstarch slurry for a much thicker sauce. Use a very small amount of this—perhaps ¼ teaspoon mixed with water—is enough for this quantity of sauce.
How to Fix a Sauce That Is Too Salty
Due to all the ingredients that can contain salt in this sauce recipe including—Cajun seasoning, both store-bought and homemade versions, Old Bay seasoning, broth, and salted butter—you’ll want to be careful so the sauce does not become too salty.
You can do so by giving the sauce a little taste after adding each ingredient so your sauce never gets a chance to become too salty. Or, you can just go ahead and use unsalted ingredients, then add your own salt to taste right before you take the sauce off the heat.
