Ingredients:

• 2 chicken breasts, cut into cubes (about 2 cups, 400 g)

• 2 carrots, sliced into rounds (about 1½ cups, 180 g)

• 2 celery stalks, sliced (about 1 cup, 100 g)

• 1 cup short pasta, such as macaroni or small shells (100 g)

• 6 cups chicken broth (1.4 liters)

• 1 tablespoon butter (15 g)

• 2 garlic cloves, crushed (10 g)

• 1 bay leaf

• 1 teaspoon dried oregano (1 g)

• 1 teaspoon salt (6 g, or to taste)

• ½ teaspoon black pepper, optional (2 g)

Instructions:

  • Season the chicken: Place the chicken cubes in a bowl and season them with salt, oregano, and pepper if using. Toss well to coat all sides evenly. 
  • In a large pot melt the butter over medium heat. Add the seasoned chicken cubes and cook for about 5 minutes, stirring occasionally, until the surface turns lightly golden. At this stage the chicken does not need to cook all the way through, just enough to develop flavor and color.
  • Without removing the chicken from the pot, add the carrot slices, celery, crushed garlic, and the bay leaf. Stir and cook for another 5 minutes. The vegetables will begin to soften slightly.
  • Add the 6 cups (1.4 liters) of chicken broth to the pot. Stir to combine all the ingredients. Bring the mixture to a gentle boil over medium-high heat, then lower the heat and let it simmer for 10 minutes. 
  • Add the short pasta directly into the simmering soup. Stir occasionally to prevent the pasta from sticking together. Continue cooking for 10–12 minutes, or until the pasta is tender.
  • Adjust and serve: Taste the soup and adjust the seasoning with more salt or pepper if needed. Remove the bay leaf before serving. Ladle the soup into bowls and serve hot, ideally with bread or crackers on the side.
