If you’re looking some soft, fluffy, banana muffins that are full of sweet banan flavor, then you’re in the right place. My easy banana muffins from scratch are all of this and so much more! They’re made with a handful of kitchen staples and some sweet ripe bananas of course and they just taste so delicous fresh out the oven!

These easy muffins are ready in under 35 minutes too and they’re perfect for breakfast, or a quick afternoon snack!

Ingredients:
- 1 ½ cups all-purpose flour, (188 g)
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- ⅓ cup oil, (80 ml)
- ⅔ cup sugar, (135 g)
- 1 large egg, at room temperature
- ¼ cup yogurt, plain or Greek (60 g)
- 1 tsp cinnamon, optional
- 1 teaspoon ground cardamom, optional
- ½ teaspoon ground allspice, optional
- ¼ tsp ground nutmeg, optional
Instructions:
1. Preheat the oven to 350°F (180°C). Line a muffin tin with paper liners or lightly grease it.
2. In a large bowl, mash the ripe bananas with a fork until smooth.
3. Add the egg, yogurt, vanilla extract, sugar, and oil to the mashed bananas. Mix well until fully combined.
4. In a separate bowl, sift the flour and stir in the baking powder. Gradually add the dry ingredients to the banana mixture, folding gently until just combined. Avoid overmixing to keep the muffins soft.
5. Divide the batter evenly between the muffin cups, filling each about ¾ full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
