A good brisket marinade such as this one can easily bring out the deep, smoky flavors to every bite to your brisket. Whether you’re planning to smoke, roast, or grill your brisket, this marinade is all you will need to marinate the best, most vibrant, savory taste to your brisket recipe!

Ingredients

  • 1 cup red wine
  • 1/4 cup wine vinegar (red or white, depending on your preference)
  • 2 tbsp Worcestershire sauce
  • 1 tsp cumin seeds or ground cumin
  • 4 cloves of crushed garlic
  • 2 tbsp chopped scallions
  • 2 tbsp chopped cilantro
  • 2 tbsp chopped parsley
  • 2 chopped chili peppers (adjust the heat to your liking)
  • 1 tsp coriander seeds (optional, for added depth of flavor)

How to Make the Marinade

  1. To start, chop the scallions, cilantro, parsley, and chili peppers. Then crush the garlic cloves to release their oils and aromas. If you’re using whole cumin and coriander seeds, lightly toast them in a dry pan over medium heat for a minute or two to enhance their flavor.
  2. Next, in a medium-sized bowl, combine the red wine, wine vinegar, and Worcestershire sauce. Then stir in the cumin, garlic, scallions, cilantro, parsley, chili peppers, and coriander seeds (if using). Mix until all the ingredients are well incorporated.
  3. Place your brisket in a large dish or resealable plastic bag. Pour the marinade over the meat, ensuring that it is fully submerged or well-coated. Seal the container or bag and refrigerate for at least 4 hours, but ideally overnight. This allows the flavors to penetrate the meat deeply, creating a tender, flavorful brisket.
  4. Once the brisket has marinated, remove it from the fridge and allow it to come to room temperature. Depending on your preferred cooking method—whether smoking, grilling, or roasting—pat the brisket dry before seasoning it with salt and pepper. Cook as desired, using any remaining marinade as a basting liquid or sauce.

Possible Recipe Variations

  • Smoky Sweet Brisket Marinade
For a touch of sweetness, add 2 tablespoons of honey or brown sugar to the marinade. You can also replace the red wine with a smoky bourbon or whiskey to give the meat a slightly caramelized finish.
  • Citrus Herb Marinade
Swap the red wine for 1/2 cup of freshly squeezed orange juice and 1/4 cup of lime juice. This adds a bright, tangy note that balances the richness of the brisket. Incorporate 1 tablespoon of dried oregano and 1 teaspoon of smoked paprika for an additional layer of flavor.
  • Asian-Inspired Brisket Marinade
Replace the red wine and vinegar with 1/3 cup of soy sauce and 2 tablespoons of rice vinegar. Add 1 tablespoon of sesame oil and a small piece of grated ginger for an Asian twist. You can even toss in a dash of fish sauce for umami depth.

This brisket marinade offers a perfect balance of acidity, heat, and herbaceous flavors. With this easy recipe, you can make the best brisket recipes ever!

If you're marinating a larger piece of brisket, you may want to double the recipe to ensure the meat is fully submerged or evenly coated.
