Ingredients
- 6 tablespoons Worcestershire sauce: Adds a rich, umami flavor with a tangy and slightly sweet undertone.
- 12 cloves crushed garlic: Infuses the marinade with a pungent, aromatic depth that enhances the overall flavor.
- 3 tablespoons mustard seeds or powder: Provides a sharp, tangy heat and acts as an emulsifier, helping to bind the marinade.
- 3 teaspoons oregano: Adds a fragrant, earthy herbal note that complements the other flavors.
- 6 tablespoons wine vinegar: Brings acidity to the marinade, which helps tenderize the meat and balance the richness.
- 3/4 cup oil: Serves as the base, helping to distribute the flavors evenly and keep the meat moist.
- 1 1/2 teaspoons crushed black pepper: Adds a mild, spicy kick that enhances the overall seasoning.
- 3 teaspoons salt: Enhances all the other flavors and helps to draw moisture into the meat, making it juicier.

How to make this mustard herb drumstick marinade
- Prepare the Marinade: In a medium-sized bowl, whisk together the olive oil, soy sauce, honey, minced garlic, Dijon mustard, apple cider vinegar, smoked paprika, dried oregano, and black pepper. Ensure all ingredients are thoroughly combined.
- Marinate the Chicken: Place your chicken drumsticks in a large, resealable plastic bag or a shallow dish. Pour the marinade over the drumsticks, ensuring they are evenly coated. Seal the bag or cover the dish with plastic wrap.
- Marinate Time: For best results, you should refrigerate the drumsticks for at least 2 hours to allow the flavors to penetrate the meat. And, if you’re after the best flavors ever, marinate the drumsticks overnight.
Cooking the Drumsticks:
- Grilling: Preheat your grill to medium heat. Remove the drumsticks from the marinade, allowing any excess to drip off. Grill the drumsticks for about 20-25 minutes, turning occasionally until the internal temperature reaches 165°F (74°C).
- Baking: Preheat your oven to 400°F (200°C). Place the drumsticks on a baking sheet lined with parchment paper or aluminum foil. Bake for 35-40 minutes, turning halfway through, until they are golden brown and fully cooked.
- Serve and Enjoy: Let the drumsticks rest for a few minutes after cooking to allow the juices to redistribute. Serve hot with your favorite side dishes.
Important Tips for Making and Using Chicken Drumstick Marinades
- Time: While marinating for at least 2 hours is essential, avoid marinating chicken in acidic ingredients for more than 24 hours, as this can break down the proteins too much and result in a mushy chicken drumstick texture.
- Proper Storage: Always marinate your chicken in the refrigerator to prevent bacterial growth.
- Change Up The Flavors: You can also adjust the ingredients in the marinade to suit your own tastes. For example, adding extra herbs, spices that you like is a great idea.
