This easy keto meatloaf with eggs is perfect for family gatherings, to serve during upcoming holidays, or when you want something really gourmet. 

The low carb meatloaf is very juicy and made with simple ingredients. Also thanks to the instant pot you will have your meatloaf done in 25 minutes. Eggs in the meatloaf are optional, but they are a game changer. They look super interesting and give a really nice touch to the entire meatloaf.

 

Tips to make keto meatloaf

  1. The key on making a great meatloaf is in the mixing. You really have to mix all ingredients and knead like a dough. Otherwise the meatloaf may end up flat and fall apart.
  2. You can cook the meatloaf in a small bread pan if you have one that fits your Instant pot, or simply wrap it in a piece of aluminum foil. It is so much easier for cleanup. 
  3. You can make the meatloaf even juicier by simply wrapping it in bacon. Just take 5 strips of bacon and wrap it around the meatloaf before cooking. It is so good!

Ingredients for keto meatloaf in an instant pot

  • 1 lb. ground beef
  • 1 large egg
  • ½ cup heavy cream
  • ½ cup almond flour
  • Salt and pepper, to taste
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon mustard powder, optional
  • 2 hard-boiled eggs, peeled

Sauce:

  • 2 tablespoons sugar-free tomato sauce
  • 1 tablespoon golden Swerve

How to make instant pot keto meatloaf

To make, gather all of your ingredients in one place.

Then in a mixing bowl, combine ground beef, egg, heavy cream, almond flour, onion powder, garlic powder or a substitute, salt and pepper, and mustard powder if using.

Knead this mixture thoroughly. 

Take a piece of aluminum foil and spread on your countertop. Also place half the meat mixture onto the foil and shape to a flat rectangle.

Place the hardboiled eggs on top of the meat. Cover the eggs with rest of the beef and shape into meatloaf. Once this is done, crinkle the foil around the meatloaf. 

Insert the trivet into the Instant pot and pour 1 cup water into the IP.

Place the meatloaf onto the trivet. Lock the lid into place. Select Manual and adjust to High Pressure. Set the timer to 25 minutes.

Once the cooking cycle is completed, perform a quick pressure release. 

Preheat your oven to 400F. Then combine the sugar free tomato sauce and sweetener in a small bowl. Lastly, brush the meatloaf with sauce mixture.

Set the meatloaf on a baking sheet and pop in the oven for 5 minutes.

Cut the meatloaf into slices and serve.
