One of my go-to cucumber salad recipes is this refreshing cucumber salad without dill. This recipe is a nice twist on the classic cucumber salad, featuring a combination of cucumbers, red onions, tarragon, and feta. It is perfect as a light side dish or a healthy snack for any time of day!

Making a cucumber salad

Cucumbers: These are an excellent choice for summer salads due to their high water content and cool, refreshing taste. They also come packed with essential nutrients but remain low on calories, making them a great choice for low calorie dishes.

Red Onions: Its bold color and distinctive taste add depth to the salad. The intense flavor of red onions is toned down when combined with the other salad ingredients.

Tarragon: My choice of herb for this salad is tarragon. Known for its aromatic essence, tarragon offers a hint of sweetness and an anise-like flavor. This nuanced taste profile of tarragon wonderfully complements the refreshing cucumbers and the pungent red onions. 

Honey is added to balance the salad.

White vinegar gives the salad a tangy kick, and enhances the overall taste.

Finally, the tanginess and creaminess of feta provides a pleasant contrast to the other ingredients. Its subtle saltiness enhances the overall flavor profile of the salad, and rounds off the the dish.

Why Omit Dill from the Recipe?

Dill is a common addition to cucumber salads and has a distinctive flavor profile that’s not preferred by everyone. If you don’t enjoy the taste of dill or don’t have any on hand, this recipe shows you how to make the salad without it.

Omitting dill allows you to play around with other herbs that are to your liking. However, if you enjoy the taste of dill, you are welcome to add it back into the salad. Let’s make the salad!

Ingredients

  • 2 large cucumbers
  • ½ medium-sized red onion
  • 1 handful of tarragon leaves
  • 2 tablespoons white vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ cup crumbled feta cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper

How to make Cucumber Salad Without Dill

Wash the cucumbers thoroughly under running water to remove any residual dirt. Next, slice the cucumbers into thin rounds. Use a sharp knife for even, thin slices.

Peel and thinly slice the red onion. Also, rinse the tarragon leaves. Place all of these in a large bowl.

With your ingredients prepared, it’s time to create the dressing. In a small bowl, combine the white vinegar, honey, salt and pepper until they’re well-blended. 

Toss together the cucumbers, red onions, tarragon leaves and the salad dressing and chill in the fridge for half and hour.

Before serving, top with crumbled feta and any other garnish you desire and enjoy!
