If you’re looking for an easy cottage cheese scrambled eggs recipe that turns out soft, fluffy, and creamy without getting watery or dry in the pan, this is the recipe you need to save.

Scrambled eggs are so easy and good for a quick breakfast. But, just by adding 1/2 cup of cottage cheese to your scrambled eggs, they go from 12 grams of protein to 20 grams of protein per serving! And by some magic, they taste even fluffier, softer and creamier than regular scrambled eggs too!

Lately, I’ve been making and sharing my fav cottage cheese recipes on the blog, and these scrambled eggs with cottage cheese have made it to one of my go to breakfast ideas at the moment. They’re so easy to make, need just a handful of ingredients and they are great for when I want something that feels a little extra, without actually making any extra effort. And the most important part of it all is that my family enjoys these!

I like to keep them plain and simple, but they can also be dressed up with some fresh herbs, hot sauce, sauteed veggies, or some toast on the side as I’ll share below.

Ingredients

  • 4 large eggs
  • ½ cup cottage cheese (small curd is great, but any works)
  • 1 tablespoon butter (or olive oil)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Optional

  • 1 tablespoon chopped parsley, chives or green onion
  • Pinch of garlic powder or smoked paprika
  • Hot sauce on top

Tools to Use

You don’t need any fancy tools for this easy egg recipe, but these tools make the eggs creamier, easier, and way less likely to stick.

  • Nonstick skillet – You need a good non stick skillet for so many things including these scrambled eggs. This type of skillet always keep my eggs soft and prevent them from becoming a mess. Cleanup is also great after.

How to make cottage cheese scrambled eggs

Crack the eggs into a bowl and add the salt and pepper and cottage cheese. Then whisk just until the whites and yolks are blended. You don’t need to overmix this.

Grab you nonstick skillet and place it over low to medium-low heat. Then add the butter, olive oil or olive oil spray and let that heat up.

Pour in the eggs and let them sit for 20–30 seconds until the edges barely start to set.

Then grab a silicone spatula, and push the eggs from the edges toward the center in slow strokes.

Make sure you’re not stirring the eggs nonstop.

As soon as the eggs look soft and just set, turn off the heat. They should look slightly underdone in the pan. Since they’ll finish as you plate.

Taste and add an extra pinch of salt if needed.

Also, you dont always have to have them plain. Below are some other interesting ways to enjoy these eggs.

Recipe variations

1. Cottage cheese scrambled eggs with spinach

You can first saute some spinach in the butter or oil until they’re fully wilted, then add the whisked eggs. Follow the same steps above.

2. Cottage cheese egg wrap

You can pile the scrambled eggs into a warm tortilla with sliced avocado and some hot sauce. Yummy!

3. Cottage cheese eggs on toast

You can also serve the eggs over some buttered sourdough bread sprinled with some flaky salt, pepper, and chili flakes.
