And when I can make it a bit healthier without sacrificing flavor, I definitely take the chance. I came across this high protein cottage cheese queso dip and had to give it a go. It’s turned out being super easy, it’s made with easy-to-find ingredients and I must say, the results are phenomenal!

Ingredients

  • 2 cups Cottage cheese (full-fat or 2% both work)
  • 1 cup Shredded cheddar (or a Mexican blend)
  • 1/2 cup Diced green chiles (canned)
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Smoked paprika (optional, but great)
  • Salt (to taste)

How to make Cottage Cheese Queso Dip

Start by adding the cottage cheese to a blender or food processor and blend for 30–60 seconds until it looks like a smooth sauce.

Next pour the blended cottage cheese into a small saucepan over low heat and warm it for about 2 minutes. I like to stir it constantly so it doesn’t stick.

Once warm, add the shredded cheddar a handful at a time and stir until the cheese is melted before adding more. You must keep the heat low since queso can get grainy if it gets too hot too fast. Also, shred your own cheese if you want a smooth dip.

Finally, stir in green chiles, garlic powder, onion powder, smoked paprika, and salt and to tastel.

Serve the dip warm with chips, pretzels, fries, or even veggies. The dip thickens up a bit as it cools down.

Possible Variations

Spicy Queso

  • You can add 1–2 tablespoons chopped pickled jalapenos
  • You can also add a splash of jalapeno brine (just a tiny splash will do)

Smoky Queso

  • Use smoked paprika
  • You can also add a little chipotle powder, or a spoon of chipotle in adobo (if you like the heat)

Loaded Queso

Stir in any of these after the cheese melts:

  • Cooked ground beef or turkey
  • Black beans
  • Drained Rotel
  • Corn

Storage & reheating

This dip can stay fresh in the fridge, in an airtight container for about 4 days. You can easily reheat it obn the stovetop over the lowest heat for a few minutes or in the microwave in 20 seconds bursts. Make sure to stir between each burst. If it thicken up to much during storage, you can stir in a splash of milk or cream while reheating to loosen it up a bit and to make it smooth.

Will it taste like cottage cheese?

Nope. Once the cottage cheese is blended and combined with cheddar and the seasonings, it tastes creamy and cheesy like a regualr queso dip. That cottage cheese tang that you may be worried about typically fades into the background.

Do I have to use a blender?

If you want a smooth queso texture,I definitely recommend blending the cottage cheese.

Why did my queso turn grainy?

If you end up with grainy queso (or are afriad too) then pay attention to the heat when melting the cheese and make sure to keep it low for gentle heating and melting. Anything more will make your dip grainy.

Can I use pre shredded cheese?

Yes you can, but it can melt slightly less smoothly. If you want the smoothest texture, shred your own cheese from a block.
