I love making a homemade mix that will save me even a few minutes when I want to get something baked or cooked. In fact, I make most of my pancake and waffle mixes ahead and I’ve recently started making my muffin mixes ahead too! They’re so easy to prep once, they store well in the pantry, and I can easily whip up muffins whenever I feel like it!

Cinnamon Muffin Mix Recipe
Ingredients (for the dry mix):
- 4 ½ cups all-purpose flour
- 1 ¾ cups sugar
- 7 tsp (2 tbsp + 1 tsp) baking powder
- 1 ¾ tsp salt
- 7 tsp (2 tbsp + 1 tsp)
Mix everything together and store in an airtight container for up to 3 months. This makes enough cinnamon muffins mix for 3 full batches, with a little left over.
A batch = 12 standard muffins
How to Make 12 Standard Cinnamon Muffins
Step 1 – Preheat the oven
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin pan with paper liners or lightly grease it.
Step 2 – Portion out dry ingredients
In a large bowl, add 1 ¾ cups of the cinnamon muffin mix:
Step 3 – Mix wet ingredients
In a separate bowl, whisk until smooth:
- ½ cup unsalted butter, softened
- ¾ cup buttermilk (or milk)
- 2 large eggs
- 1 ½ teaspoons vanilla extract
- ¼ teaspoons cinnamon essence, optional
Step 4 – Make the batter
- Pour the wet mixture into the dry mixture.
- Stir gently with a spatula or wooden spoon until just combined (do not overmix, as a few lumps are fine).
Step 5 – Fill muffin pan
- Divide the batter evenly between the 12 muffin cups (they should be about ¾ full).
Step 6 – Bake
- Bake for 16–20 minutes, or until a toothpick inserted in the center comes out clean.
Step 7 – Cool & serve
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
- Enjoy warm or at room temperature!

- Optional topping: 2 tbsp coarse sugar mixed with ¼ tsp cinnamon powder (dip each muffins in some melted butter and then dip into the cinnamon sugar mixture)
