These amazing low carb peanut butter cookies are something you can make any time and with ingredients you probably have in your kitchen. For this recipe,  our homemade keto peanut butter was used, as this one has no sugar at all. 

However, you can also make these low carb cookies with creamy peanut butter, or if you want some texture, with a crunchy peanut butter.

Is peanut butter okay on the keto diet?

Reduced sugar or sugar free peanut butter is fine on the keto diet in moderation as these are lower in carbs and most brands only contain 4.1 grams of net carbs per serving. For this recipe we’ve used our very own homemade peanut butter which contains only 2 grams of net carbs in a serving and contains absolutely no sugars.

 

Tips to make low carb peanut butter cookies

  1. As mentioned, you can use creamy or crunchy peanut butter. It is up to you, but try making both varieties to decide which is your favorite.
  2. The cookie dough is very soft, and to get the best results before baking, pop the mixture into the fridge for 20 minutes to firm up. This will make a huge difference in how easy the cookie dough is to handle.

In order to make these peanut butter keto cookies, these are the ingredients you will need:

  • ½ cup creamy peanut butter
  • 4oz. cream cheese
  • ½ cup Sukrin gold or golden monkfruit sweetener
  • ½ teaspoon baking soda
  • 1 small egg
  • Vanilla extract, optional

Gather all of your ingredients for the peanut butter cookies in one place.

Preheat oven to 350F and line a cookie sheet with baking paper.

 

In a mixing bowl, combine creamy peanut butter, cream cheese, sweetener, baking soda, and the egg. Also, add vanilla extract if you’re using.

 

Once the ingredients are combines, the mixture should look like this:

 

Next place the mixed batter into a fridge for 20 minutes.

 

Once the time is up, separate the batter into 6 scoops and place onto the baking sheet.

Bake the ketogenic peanut butter cookies for 12-14 minutes or until golden.

The cookies will be soft once removed from the oven, but they will firm up after cooling for a few minutes.

How to store

To store these, place in the fridge in an air tight container for up to a week. 

To freeze peanut butter cookies, let the cookies cool completely and store them in a freezer safe container with parchment paper between the layer of cookies. Cookies will keep for up to 2 months. Let thaw in the fridge or on the counter.

To freeze peanut butter cookie dough, roll the dough into balls as directed, place the balls on a cookie sheet and place in the freezer until solid. Place frozen dough balls in a freezer bag or freezer safe container for up to 2 months. When ready to bake, no thawing needed, simply place the frozen dough on a lined baking sheet and bake for 2 – 4 minutes longer than the recipe time.

You can substitute:

  • Substitute our homemade peanut butter for the lowest carb store-bought peanut butter, keto peanut butter powder, almond butter or any nut butter.
  • Substitute Surkin gold for monk fruit sweetener, lakanto or swerve.

 

What sweeteners can be used?

You can use any low-carb sweetener for this recipe including lakanto, monkfruit or swerve. Also, try to use granulated low carb sweetener if you have it as it works better in the recipe. 

 

Can these be made with almond flour or coconut flour?

You can add almond flour or to this recipe is you choose as almond flour will work very well in this recipe. 

You can also use coconut flour in this recipe, however, you must increase the liquid, by adding some more butter or some almond milk. Without increasing the liquid, your cookies may become too dry.

 

How many carbs are in keto peanut butter cookies?

There are 3.5 g net carbs in every serving of these peanut butter cookies.

 

Can I make these keto peanut butter cookies with protein powder?

If you want to add more protein to these cookies you can definitely add a scoop of protein powder to the recipe. Keep in mind that adding the protein powder alone may not work well, so also add a scoop of coconut flour together with the protein powder.

 

Do you need eggs for keto peanut butter cookies?

For these specific flourless keto penaut butter cookies you do need them and they cannot be substituted. This is so because the mixture needs some eggs to bind all the ingredients together. Without the eggs, you only have peanut butter and sugar, and therefore, you will get a batch of melted cookies.

However, if you were to add some almond flour or coconut flour to this recipe, you could remove the eggs or even replace them with some flax eggs.
